Bagna Cauda

Yields 1 cup

Ingredients

  • 1 cup olive oil
  • 2 tablespoons butter
  • 2 teaspoons minced garlic
  • 8 anchovy fillets (or to taste), chopped roughly
  • 1 Tablespoon parsley, chopped
  • Freshly ground pepper to taste
  • Pinch of hot pepper flakes

Procedure

  1. In a small skillet, heat oil, butter and garlic over medium heat for several minutes. Don't allow the garlic to color.
  2. Add the anchovies, reduce the heat to low and cook several minutes longer until the anchovies begin to dissolve.
  3. With the back of a wooden spoon, mash the anchovies and incorporate them into the oil and butter.
  4. Add the remaining ingredients and stir to mix thoroughly.
  5. Serve warm with crudités, grissini, or bread.
