Yields 1 cup
Ingredients
- 1 cup olive oil
- 2 tablespoons butter
- 2 teaspoons minced garlic
- 8 anchovy fillets (or to taste), chopped roughly
- 1 Tablespoon parsley, chopped
- Freshly ground pepper to taste
- Pinch of hot pepper flakes
Procedure
- In a small skillet, heat oil, butter and garlic over medium heat for several
minutes. Don't allow the garlic to color.
- Add the anchovies, reduce the heat to low and cook several minutes longer
until the anchovies begin to dissolve.
- With the back of a wooden spoon, mash the anchovies and incorporate them
into the oil and butter.
- Add the remaining ingredients and stir to mix thoroughly.
- Serve warm with crudités, grissini, or bread.
