Cinnamon Oat Pancakes

A great way to start the day.

Ingredients

  • 1 cup all-purpose flour, stirred or sifted before measuring
  • 1 cup oat flour
  • 2 ½ teaspoons baking powder
  • 3 tablespoons brown sugar
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 2 egg, slightly beaten
  • 2 egg whites, beaten to soft peaks
  • 1 ½ cups milk
  • ½ cup buttermilk
  • 2 tablespoons melted butter

Procedure

  1. Sift together all-purpose flour, oat flour, baking powder, brown sugar, cinnamon and salt.
  2. In a separate bowl, combine whole eggs milk and buttermilk
  3. Add to flour mixture, stirring only until smooth. Blend in melted butter. Then fold in egg whites.
  4. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.
