Cinnamon Oat Pancakes
A great way to start the day.
Ingredients
- 1 cup all-purpose flour, stirred or sifted before measuring
- 1 cup oat flour
- 2 ½ teaspoons baking powder
- 3 tablespoons brown sugar
- 2 teaspoons cinnamon
- ½ teaspoon salt
- 2 egg, slightly beaten
- 2 egg whites, beaten to soft peaks
- 1 ½ cups milk
- ½ cup buttermilk
- 2 tablespoons melted butter
Procedure
- Sift together all-purpose flour, oat flour, baking powder, brown sugar, cinnamon and salt.
- In a separate bowl, combine whole eggs milk and buttermilk
- Add to flour mixture, stirring only until smooth. Blend in melted butter. Then fold in egg whites.
- Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.
