Serves 4
The character of this traditional dressing will change depending on the mustard
you use. An assertive, true French Dijon mustard is perfect, but you can also
try a flavored mustard - a tarragon Dijon, Champagne Dijon (one of my favorites),
or an herbed Dijon. I like to serve this dressing over a salad of red-leaf and
Boston lettuces combined with a handful of watercress.
Ingredients
- 1 tablespoon red wine vinegar
- 1/8 teaspoon fine sea salt
- 6 to 8 turns freshly ground black pepper
- 4 tablespoons extra-virgin olive oil
- 1 teaspoon Dijon mustard
Procedure
- In a small bowl combine the vinegar, salt, and pepper, and stir until the salt
dissolves. Add the oil and mustard and whisk until the ingredients are emulsified.
Pour over a salad, toss to coat thoroughly, and serve immediately
