Lynda's Amaretto Bundt Cake

Ingredients

  • 1 cup (2 sticks) of butter or margarine
  • 1 8 ounce brick of cream cheese
  • 2 cups granulated sugar
  • 1 teaspoon real vanilla extract
  • 1 tablespoon Amaretto
  • 6 eggs
  • 3 cups cake flour

Glaze

  • Powdered sugar
  • Warm water
  • ½ tablespoon Amaretto
  • Maraschino cherries

Procedure

  1. Preheat oven to 325 degrees. Butter and flour 12 cup bundt pan.
  2. Cream together the butter (or margarine) and cream cheese until well blended
  3. Add sugar and beat until fluffy. Add vanilla and Amaretto
  4. Add eggs one at a time, beating well after each addition
  5. Add cake flour, beating until completely combined
  6. Pour the batter into the greased and floured bundt pan. Bake for 1 hour until cake tests done
  7. Make a thin glaze by mixing powdered sugar, warm water and ½ tablespoon Amaretto
  8. Drizzle onto the cake and garnish with maraschino cherries
