Amazingly lightweight and perfectly balanced, these hollow-edge chef’s knives carry thin blades constructed from MBS-26 stainless steel, making them exceptionally hard yet flexible. The asymmetrical cutting edges are ground 80% on the right side of the blade and 20% on the left, giving the blades a thinner, sharper edge. These tapered-style edges take pressure off ingredients, for a perfect finished cut. The blades are then polished to a mirror finish. The incredibly smooth and rounded European-style composition handles have a sophisticated look and last much longer than wood handles. The most popular kitchen knives, these chef’s knives feature scallops, also called kullens, which prevent food from sticking to the blade. They are used for a variety of cutting tasks, such as chopping, slicing, dicing and mincing. Made in Japan.
