Amazingly lightweight and perfectly balanced, this hollow-edge santoku knife carries a thin blade constructed from MBS-26 stainless steel, making it exceptionally hard yet flexible. The asymmetrical cutting edge is ground 80% on the right side of the blade and 20% on the left, giving the blade a thinner, sharper edge. This tapered-style edge takes pressure off ingredients, for a perfect finished cut. The blade is then polished to a mirror finish. The incredibly smooth and rounded European-style composition handle has a sophisticated look and lasts much longer than wood handles. This santoku knife features scallops, also called kullens, which prevent food from sticking to the blade. It is perfect for chopping, slicing, and cutting fruits, vegetables and meats. Made in Japan.

| Masahiro cutlery is considered one of the most prestigious brands in Japan. Produced in Seki, Japan, these knives are made of a high-carbon stainless steel that is proprietary to Masahiro. It is treated by three stages of quenching, sub-zero treating and tempering, resulting in an extremely durable, yet flexible blade. The thin, incredibly sharp edge makes these knives top of the line.
