Mediterranean-Style Grilled Whole Fish

Serves 4

For the marinade:

Ingredients

  • ½ cup extra virgin olive oil, plus 2 tablespoons
  • ½ cup dry white wine
  • 1 lemon, juice and zest
  • 4 garlic cloves, chopped
  • 1 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon fresh mint, chopped
  • 1 teaspoon fresh oregano, chopped
  • Fresh black pepper to taste
  • Salt to taste

Procedure

  1. Whisk all marinade ingredients, in a non-reactive 9" x 13" baking dish. Add fish and coat both the inside and outside with marinate. Marinate up to 35 minutes at room temperature, turning occasionally.

For the fish:

Ingredients

  • 1 – 2lb whole red snapper, sea bass, branizi or other small white fish, cleaned, gutted, and scaled
  • 3 leeks, cleaned and halved
  • 1 lemon, sliced into about 5-6 slices

Procedure

  1. Take the stainless steel flexi basket and layer the leeks on the bottom half of the basket, followed by the lemons. Place the whole fish in the center of the basket, close and grill 10-12 minutes on each side or until the fish is done. Serves 1-2.
