Pat's Passion Bundt Cake

Ingredients - for the cake

  • 1 large box milk chocolate cake mix
  • 1 12 ounce package milk chocolate chips
  • ¾ cup finely chopped pecans
  • 4 eggs
  • ½ cup vegetable oil
  • ¼ cup water
  • 1 ¼ teaspoon vanilla
  • 1 4 ounce package instant chocolate pudding mix
  • 1 cup sour cream

Ingredients - for the frosting

  • ½ cup butter
  • 1 cup brown sugar
  • ¼ cup evaporated milk or half & half
  • ¼ cup sifted powdered sugar

Procedure

  1. In a small bowl, combine 2 tablespoons dry cake mix with the chocolate chips and pecans. Set aside.
  2. Combine cake mix, eggs, oil, water, vanilla, pudding mix and sour cream. Mix very well in a mixer
  3. Fold in the chocolate chip and pecan mixture
  4. Pour the batter into a greased and floured 12 cup bundt pan
  5. Bake in a 350 degree oven for 55 minutes. Let cool for 25 minutes then invert onto a plate. Cool completely.
  6. In a small saucepan, combine butter and brown sugar
  7. Stir constantly until it bubbles then add the milk and powdered sugar
  8. Remove from heat
  9. When cake is completely cooled, frost
