Pressure Cooker Herb “Roasted” Chicken

Quick cooking and a minimal amount of liquid produces this juicy, tender and flavorful chicken dish. If possible, use fresh herbs for a more assertive fragrance.

Serves 4

Ingredients

  • 3 lb chicken cut into pieces
  • 3 medium tomatoes, sliced
  • 1¼ cup chicken broth or stock
  • ¼ cup parsley, chopped
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh sage, chopped
  • Hot cooked brown or white rice
  • Salt and pepper to taste

Procedure

  1. Heat butter in the pressure cooker and brown chicken on all sides.
  2. Remove chicken and sauté onions until golden brown.
  3. Add tomatoes, parsley, chicken stock, salt and pepper.
  4. Add chicken and herbs.
  5. Close lid and bring to pressure.
  6. Cook for suggested cooking time- position 1, 28 minutes or position 2, 15 minutes.
  7. Release pressure, remove lid and serve over the white or brown rice.
