Stuffed Artichokes
Versatile and delicious, artichokes are packed with vitamins and nutrients. Unfortunately, many people rarely cook with them because of the time it takes. Using your pressure cooker will help you dramatically decrease the time you will spend steaming these healthy delights.
Serves 4
Ingredients
- 4 large artichokes (clip each leaf and cut off stems)
- 2 slices of white bread per artichoke (stale bread is the best)
- 1/2 cup Italian breadcrumbs
- 2 tablespoons olive oil
- Salt, black pepper and garlic to taste
- 3 tablespoons Parmesan cheese
Procedure
- Remove stems from artichokes and peel and chop them into small pieces. Put in large bowl.
- Cut bread in small pieces and add to stems. Take remaining ingredients and mix together, adding enough water to mixture to hold ingredients together. The more spices added, the tastier the recipe.
- Wash artichokes, spread center open and put stuffing inside. Put artichokes in pressure cooker with enough water to cover 1/3 of artichokes.
- Close lid, bring to high pressure, then lower heat and cook for 12 minutes. Release pressure using the automatic release method, open lid and serve while hot.
