Opening in May of 2012, Hokusei Sushi quickly changed the way that Portland thinks of sushi. While staying true to traditions around the crafting of great sushi, Hokusei has taken that extra step to bring creative concepts from local cuisine and introduce its customers to wonderful new varieties of fish from around the world. In short, Hokusei has managed to blend the best of Japanese and Northwest cuisine while still capturing the quality, precision, and artistry that makes traditional sushi great. In this demonstration-style class, Hokusei’s Chef Lance Dillard will walk guests through the creation of both classic sushi and some of his Hokusei favorites. Guests will have the opportunity to sample all of Chef Dillard’s creations.
