My only complaint is a very minor one - the instructions for sourdough starter that the booklet gives is somewhat confusing and also odd. It's clearly designed for someone who wants to make one batch of sourdough at a time and not keep a starter long-term. It doesn't describe how to prepare a starter for long-term use. If you want to just make one loaf of sourdough then it's fine, but if you want to make more than one I recommend using the King Arthur Flour online instructions for making a sourdough starter from scratch, or buying a starter (Etsy has a great one from Alaska that's a 100+ year old culture). The core is that the booklet has you start with commercial yeast, which wipes out the wild yeast you're trying to cultivate.
