Unique handle
What makes this knife amazing? The handle. The Epicurean handle feels so soft and comfortable in your hand. The wider blade is strong and easy to control. This is my new favorite knife.

What is the grind angle & HRC for this steel?

BEST ANSWER: The grind angle on these knives is between 20"-22 1/2" and a Rockwell harndess of 61.
The Wusthof new knives, Epicure, have a ceramic coating on the blade. Why would this not be destroyed as you sharpen the knive over time

BEST ANSWER: The ceramic coating does not cover the blade edge. As long as you sharpen the blade at the recommended 20 degree angle, you don't risk damaging the ceramic
