For this exclusive collection, Sur La Table worked with the master himself—along with renowned German knife maker Zwilling J.A. Henckels—to create an exquisite line of artisan knives designed by Bob and crafted to his exacting specifications.

AN OBSESSIVE DEDICATION TO EXCELLENCE
Bob Kramer has spent nearly two decades reducing the craft of knife making to its essence, creating his original artisan knives on his own from start to finish. In his studio, he forges the best raw materials with a relentless pursuit of perfection into some of the most beautiful and sought-after cutlery in the culinary world. Professional chefs often wait years to get their hands on one of Bob’s legendary handcrafted creations.  

RAZOR-SHARP DAMASCUS BLADE
The blade begins with a core of SG2, a super-premium steel with a fine grain structure that takes and maintains an incredibly sharp edge. The core is clad on each side with 50 alternating layers of nickel and Damascus stainless steel, resulting in an exceptionally strong, 101-layer blade. Features beautiful, deep-etched chevron pattern designed by Bob.  

DURABLE LINEN-MICARTA HANDLE
Prized as one of the most durable handle materials available, linen micarta withstands extreme temperatures and resists wear, even after prolonged use. Handle is triple riveted for strength and control, with full tang tapered to Bob’s precise specifications. Each knife features a signature center pin handcrafted by Bob himself.  

CUTTING-EDGE ENGINEERING
Blade is cryogenically hardened, rapidly cooled, and then tempered twice to maximize durability and achieve a 63 Rockwell hardness.  

TRADITIONAL CRAFTSMANSHIP
Skilled Japanese artisans hand finish each knife using a traditional honbazuke honing technique. Blades are sharpened twice on whetstones with custom grits, followed by mirror polishing on a leather wheel. The angle of each blade is honed to 15° on each side for scalpel-like sharpness.

Amazing santoku
Santokus are my favorite style of knife. And this is my favorite santoku of them all. It's unusual in that it allows a better rocking chop than most santokus which typically favor a more up and down style of cutting. Thought I'd be getting a 6"" chef to match my 8"" chef, but this was a far more comfortable and easy knife for my style of chopping. And while it's similar in size to my 8"" chef, it means that I can still use a Kramer when I have a guest cook using my other one.

If you're thinking of getting the Kramer set, the Santoku is a nice addition

Sur La Table Store
Building my Kramer set as funds allow...already own the slicer (which is absolutely awesome) and have other Japanese styled 8" & 10" Chef's knives in my set. Wanted a small to mid sized all around knife so it was a toss up between the Santoku and 6" Chef. Decided on the Santoku because of the solid reviews and the expected versatility.

Is the blade sharpened on both sides?

I'm looking for the one that has the straight blade on one side.

Best Answer: The REAL answer to your question is yes and no. This blade is not as dramatically one sided as "Japanese" style blades. But if you do look down the length of the blade you will find, as with all of The Certified Master Bladesmith Bob Kramer's knifes, there is one side that is flat. When using the knife, the side that faces the left is flat and should be treated (sharpened) as such. The side that faces the right has a very slight angle. So, if you are looking for a one sided knife..this is it. If you are looking for a sashimi knife, or a deba, kiritsuke, or any other japanese style one sided knife for that matter, then the answer is no.

whay are people referring to a Shun version of this Bob Kramer Santuko knife? Both the Carbon Steel and Damascus blades are Zwilling products.

Best Answer: Keeps a great edge, and food does not stick to the side as bad as some of the other smooth knives. This knife has been sharp enough since I got it to shave a tomato as thin as I would want. i love it. Cost is a bit, but my favorite by far.
