Got to try this in a Sur la Table Knife Skills class - absolutely love the balance and the feel of the handle. (I'd say I have average size palms for a woman.) The extra finger clearance is great, and the more pronounced curve towards the tip makes it feel like a smaller knife. This just really worked for me.

I have both items and just love them. I used the knife in some of classes. It fit my hand very well and had nice heft & VERY sharp blade that stays sharp. The steel puts a fine edge on my knives that an electric sharpener cannot attain.

If I use a wet stone to sharpen will it defect or damage the ceramic coating on the blade

The ceramic coating is above the cutting edge of the blade. You will only damage the coating if you sharpen the blade perfectly flat against the wet stone instead of at the recommended 20 degree angle.
Will the Wusthof Epicure 8in chef knife fit into any of these? If so, which one? Tnx

Are the Epicure knives sharpened at the same 14-degree angle other high-end Wusthof knives are sharpened at?
