QUALITY AND ADAPTABILITY
GOES FAR BEYOND ITS BASIC PURPPOSE (MAKING SAUCES EASILY SINCE A WHISK CAN REACH CURVED PAN CORNERS), 2-QUART SIZE IS PERFECT FOR MEDIUM AMOUNTS OF VEGGIES, RICE, REHEATING, MAKING GELATINES, HARD BOILING EGGS, ETC. WASHES EASILY, HEATS EVENLY AND QUICKLY WITH THE TRI-PLY CONSTRUCTION AND CURVED BOTTOM EDGES.
LID FITS WELL AND LID HANDLE IS LARGE ENOUGH TO SLIP OVER THE PAN HANDLE TO HANG BOTH TOGETHER. PAN HANDLE IS COMFORTABLE; POT IS WELL BALANCED.

A Beauty
I've used this pan for a few weeks and enjoyed the results. I use it more for day to day cooking then for the specialty cooking it was designed for. I would like to see a 3.5 qt in the same design. Love it!

Really happy with this product. Performs well by heating evenly and is easy to clean up. Great that you can put these in the dishwasher vs. my caphlon. The bottom is already scratched after 2 weeks of nearly daily use. No problem as this is expected. I'll eventually pick up other sizes as the need arises. I have this piece and the largest frying pan. Love them both.

Heats evenly
This is a great everyday pan... I have used it for small soups, rice, etc., and been pleased with all... I also have the small 8" frying pan and really love it... Cooks beautifully, nice crisp crust, and cleans up like a dream...

A TREAT TO HAVE
How many times do we wish we had a pan with a rounded bottom? The use of this pan is not confined to creams, etc, that we wisk...it can be used for anything...a double duty pan! I liked it so much, I purchased a second one for a gift! Recipient was thrilled! Others wanted one just like it!

How many mm thick is the pan, and what is it's weight (w/o lid)

Best Answer: The interior stainless steel layer is 0.4mm, the middle aluminum layer is 1.7mm and the exterior stainless steel layer is 0.6mm for a total thickness of 2.7mm.This saucier weighs about 4lbs without the lid

Will steamed rice stick to bottom on high heat?

Best Answer: Yes -- but it would stick to the bottom of any non-stick pan. (Twenty years cooking rice in Asia and five sets of cookware have taught me that!) The good news is that this pan cleans very easily; just a short soak in hot water and then everything washes away. The bottom of the pan is very thick, so things don't scorch unless you make a real effort. Hope this helps!

Would this pan replace the saucepan? Or do both have their uses?

Best Answer: This pan is quite versatile and the shape is very useful for sauces but it also can be used as a conventional saucepan, e.g.boiling potatoes ,etc, however the volume, which is 2 qt when filled to the very top edge, is somewhat less than my 2 qt saucepan, where the 2 qt measure is marked about 1 inch below the top edge of the pan.

Best Answer: The saucier is 7½ in diameter; The handle adds 6½ [like all Sur La Table stainless steel saucepans, the handle is always touchable when hot; in addition, the handle's large opening makes it easy to hang from wide hooks. Measuring from lip to lip under the pot is ten"'. The curved bottom makes for extra-efficient scraping when you use a slightly flexible spatula, and the curved lip makes pouring considerably easier.
I am not fond of the all-steel lid, since I like to keep an eye on what's cooking (contrary to what your average Old Wife will tell you, a watched pot does, indeed, boil). If you should have another Sur la Table saucepan--and if you don't, I urge you to get one--and it has a 8" glass lid, you can use it for all manner of recipes.
By the way, if you DO buy this saucier (and I urge you to do so), and you want to keep it as good-looking as it is good-cooking, use only Bar Keepers Friend. I am sure you can find it at any relatively large grocery store. You should also put a small piece of soft stuff--the rubberized mesh shelf paper--over whatever you rest the pan on when you are washing it.
Obviously I'm prejudiced, and why not? This collection of pans of all sorts looks good on display, cooks like a dream, and lasts of years if you take care of it, and as if you don't. too; it lasts for years and cooks just as well as it did new but it won't be as pretty if you bang it around, scrub it using SOS-type pads, or do things which will scratch and/or dent stainless steel. If I were still working long hours, I'd probably have be satisfied with the pan's developing a nice patina).
