Well made pans
I own both sizes. The big one gets used once a year while the smaller pan sees more frequent duty. Solid construction. A cooking magazine tested several roasting pans and gave these a positive rating; I concur. No need to spend more. Easy clean up with Barkeepers Friend. Good handles.

love this roaster.
I own several roasting pans and this is one of my favorites. It is very well made and a perfect size to roast a chicken, duck or a roast beef. I bought this for myself about two months ago, and I love it. I have also been washing it in the dishwasher without any issues or problems.

I love this pan
I needed a smaller roaster for my husband and myself. This is perfect. I cooked a perfect Thanksgiving turkey for 5 people in it. Clean up was a breeze. Also, I made gravy in it without any problem. Love it!!!

Nice heavy and well made
This was , as another reviewer put it, a great addition to my culinary arsenal. I will hopefully buy another that will be a bit larger , as the rack I have does not fit, but that's because I did not do the math.

one of few I could find in old standard 9X13 size . most are 12 X16 now which don't match up with all the baking mixes that require 9X13 . and most of the time large enough for my roasting needs.

We now have an induction stove and my small All Clad roaster - that I adored - does not work on the stove top to make the gravy - so I am trying this instead as it says it works with induction

It is beautiful, heavy duty, and made of stainless steel. My husband has decided that we won't use anything made of aluminum any longer, so I've been replacing everything I have with only those things that I will love working with. BEST ANSWER: Go with the 16x12. It's good for a turkey up to 25lbs.
Can you roast a turkey without using a rack and get the same results as you would with one? Secondly, do you sell a rack to fit this pan

BEST ANSWER: If you put the turkey on a nest of vegetables on a piece of parchment paper I think your results would be fine. You might try setting the whole thing on a half sheet pan. I do, and it keeps the bottom juices from burning. Not sure whether they sell a rack specifically for this pan, however I bought one separately and it's fine.
Does the length measurement include the handles?

BEST ANSWER: The dimensions listed for the 13 x 9 include the handles, but not the 16 x 12. With handles, that one is 18 1/4"" x 12"" x 3 1/2""
Can I use this on a flat glass induction cooktop to make gravy. I cannot tell if the center is convex or concave.

BEST ANSWER: We just purchased the larger roaster tonight (Nov. 17, 2015) and as of 11/2015 the roaster CAN BE USED on an INDUCTION cooktop :) So for anyone looking to make dripping-gravy in their roaster, the ones now available can be used on induction.

BEST ANSWER: I think that this pan is too small for a whole turkey. It works well for a roast chicken. Can use it to do turkey breast (depending on size) or turkey legs, etc. Could also work for stuffing depending on how much you are making.

are metal utensils safe to use in this pan?

BEST ANSWER: generally you are told not to use metal utensils on Teflon. This is stainless steel, so I don't think that it is a problem. I would not hesitate to use a metal whisk , or a metal spatula in this pan. I have had this pan for about a year (and love it). I do use metal utensils, and it is still as shiny as new.
Is the roasting pan shiny on the outside and can I clean it with an steel wool soap pad?

BEST ANSWER: It's very shiny both inside and out. The inside is like a mirror. We cooked a standing rib roast in it Christmas with high heat and lots of splattered fat. After a soaking overnight we cleaned it with a plastic scrubby fairly easily. I don't think you need a steel wool pad but I think it may mar the finish.
I need an extra large roasting pan. We usually cook a 25lb turkey so it needs to be big. What is the best pan and size?

BEST ANSWER: I have both the small and large size of this pan. I use the small one on a weekly basis to broil chicken and fish and it works very well. The large roasting pan only gets used once or twice a year and is perfect for roasting a large turkey. They are heavy duty stainless steel and cook very well and clean easily after soaking in water for a bit. For a turkey that size you definitely need the bigger pan. I love both of mine.
Can anyone offer a comparison of this pan to the Calphalon Accucore or Contemporary Stainless roasting pans?

BEST ANSWER: I am not familiar with the Caphalon pan, but I do own two all clad roasters (he roti pan and the lasagna pan), I think that the quality of this Sur la Table roasting pan is as good as the all clad pans. I believe the material is the same. It is beautiful and gleaming, just like all clad and cleans up beautifully in the dishwasher without issue. I use the Sur la Table roaster more often because the size is a more functional size. I find it perfect for roasting a whole chicken (the all clad pans are really a little too large for this), it is also a good size for lasagna (for about six servings). It has become one of my favorite roasting pans.

BEST ANSWER: YES, you can!! I have done it! I have two of these pans, of different sizes. I used the larger one to bake our Thanksgiving turkey in last year. I put the pan on two burners on our gas stove, in order to make the gravy.
I used this pan once and there is already some discoloration due to the grease from the chicken. What should I use to remove it without scratching the finish?

BEST ANSWER: I haven't experienced any discoloration in my roasting pan. Are you sure that the discoloration is from Greece? What I find causes discoloration on stainless steel pans is salt. So I try never to get salt on the metal. I only add salt to a pot of liquid after the liquid has come to a boil (or simmer), so the salt disloves and doesn't sit on the metal. When I roast in the roasting pan, I try to season the meat (chicken or roast) outside of the roasting pan, on a plate, for example, or in my hand over the sink, to get the salt on the food, but not on the surface of the pan. Besides discoloration, salt can also cause the metal to pit. If I was trying to clean a discoloration from a stainless steel pot or pan, I would try a fine grade scouring powder like "Bar keeper's friend" or "Bon Ami". I hope that this helps.
How does it's performance compare to the All-clad one?

BEST ANSWER: I only have the Sur La Table roasting pan, but I do have All-Clad pans, and the quality seems equal. My biggest issue with the SLT roasting pan is that it conducts heat too well -- it stays hot for awhile after you take it out of the oven and I've burned myself 3 times. :)
What is the depth of this pan? I'm thinking that the deeper the pan is, the better job it will do of keeping chicken grease from splattering in the oven. But maybe it will splatter no matter how deep the pan is?

BEST ANSWER: It's 3 1/2" deep. I imagine it'll spatter no matter what, depending on how high the bird sits out of the pan, the oven temp you use & the amount of fat you use to coat the skin.
Can the large roasting pan also be used to bake a large number of (25 to 30) pieces of boneless chicken breast and thighs?

BEST ANSWER: I have the SLR small roaster and love it. I find it especially useful because of its size. Perfect for roasting a whole chicken or making lasagna for a few people. I have several all clad roasters and love them too, but I find the smaller size of the SLT roaster to be more practical. I do not have a Mauviel roaster, but I have a Mauviel 3.4 qt Rondeau. It is my favorite pot/pan. I use it for everything including roasting (a chicken will fit or chicken breasts), braising, deep frying, scrambled eggs, etc. It is the most versatile cooking utensil that I own, and I really have a lot of pots and pans. I also feel that the quality of Mauviel is superior to all the other brands that I own. This rondeau just has a wonderful "feel". The handles are slightly larger than the all clad rondeau and there is a general heft to this pot that I love (without being too heavy. So if I had to make an educated guess, I would say that the Mauvel is better, the price is higher too. So either would be a good choice, they will all last a lifetime.

Are these roasting pans dishwasher safe? Why is hand washing recommended? I hate having to clean pots or pans by hand. All of the all clad that I own go into the dishwasher without a problem.
