The Miyabi Kaizen line combines advanced ice-hardening techniques with the artistry of traditional Japanese craftsmanship. Each knife is carefully crafted of vg10 “super steel” core surrounded by a graceful Damascus pattern to expose the meticulously forged 65-layer steel construction.

Each blade goes through a Cryodur four-step ice-hardening process for superior strength, flexibility and corrosion resistance. The edges are then hand-finished by master craftsmen using a traditional three-step honbazuke blade-honing technique for a lasting edge. The resulting blade is optimally sharpened to precise angles for outstanding edge retention.

An ultra-durable black micarta handle features a mosaic pin, eye-catching red accents and logo end cap. Limited lifetime warranty. 6". Hand wash. Made in Seki, Japan.

Miyabi Kaizen Rocking Chef�s 6 inch
It looks like I reach for my 6 inch chefs knife more often than any other knife in my block. I own a 10 year+ wustof 6 inch that has been sharpened to a slicing knife by now and needs to be retired.
The Miyabi Kaizen Rocking Chef�s is between an asian and a western knife's weight, feels solid to me, nice. The blade is thin and requires a 15 deg included bevel, ""asian""...so it is very sharp and slices with ease.
I have only had it a few days and have no idea about durability or how long the edge will hold.
The most striking feature other than the overall design is the amazing quality. When you see this this you will be impressed! From all angles it shows quality. I realize this sounds over the top but it is a work of art. It is almost to nice to put to work!

I will try and get back to this site to give one or two year durabilty review

Perfect!
This knife is perfect. The right size, comfortable to use and sharp! It doesn't hurt that it is also beautiful

Artfully Designed Workhorse
This was the first good quality piece of cutlery that I acquired (actually it was the Fusion version which is the same blade with a slightly different handle), and it transformed cutting from a tedious chore to a project I anticipated with pleasure. The balance is good, the craftsmanship excellent, particularly for this price point, and the edge has held up quite well at six months in near daily use. As the name indicates, it really excels in mincing and dicing,and the wide blade helps in scooping up cut material. One would probably be advised against casual or bargain sharpening, as I suspect that a significant part of its impressive performance is related to the compound 9.5/12 degree edge. I have tried to train myself in freehand sharpening only to realize that my good knives would be hopelessly dull and I blind and senile before I would trust myself to attempt a 12 degree cutting edge bevel on a good knife freehand. On the other hand, I am hopeful that with some extra practice with the Edgepro system I will be able to maintain this knife myself for many years

great features
I simply love this knife. Well worth the money.
I bought several Japanese knives to replace the heavier European knives that I previously owned.
This rocking chef knife is light enough and is easy to maneuver and rocks over veggies to cut fast and thorough. So I love the design and heft!
Not to mention it is simply beautiful and oh yes, very sharp. A must buy if you cook your own food alot.
Works great on veggies and small proteins

"Myabi 6"" rocking knife is perfect"
This is the best knife that I have ever used, hands down. I find that I can use it for almost everything
