Set includes 8" chef’s, 7" santoku, 9" bread, 3½" paring, kitchen shears, sharpening steel and bamboo knife block.

Industry-Leading SG2 Core
The ice-hardened symmetrical blade is made from Micro Carbide powder steel SG2, which boasts a Rockwell hardness of 63 through a proprietary ice-hardening process called Criodur. The core is then surrounded with stainless steel that’s hammered to a dramatic Damascus-textured finish.

Legendary Katana Edge
Using traditional methods and new innovative techniques, each knife in the Miyabi Artisan SG2 collection features a hand-honed blade finished with a katana edge.

First, tsuchime:
The three layers of SG2 steel are hammer-finished to allow food to pass across the blade without sticking.

Then, honbazuke:
The edge is sharpened with this ancient three-step process, which involves sharpening the blade twice on whetstones, then mirror polishing it on a leather wheel.

Finally, katana:
Each blade is hand-honed to an angle between 9½° and 12° per side—a process that was developed over 1000 years ago to create the ultimate sharpness for samurai swords.

Distinctive Cocobolo Pakkawood Handle
Made with unique Cocobolo Rosewood pakkawood, featuring brass and red spacers, a mosaic pin, and a stainless steel end cap, the handles are both ergonomic enough for any cook and elegant enough for any kitchen.

GORGEOUS!
Exceptional knives--I love how sturdy they are while keeping their edge. The handles are super comfortable. I cut a lot and my hand does not get tired. Very sharp! Slices through veggies like butter. And...they are absolutely beautiful! I'm SO happy with this set!

What's the best way to sharpen them, are they single edge or double edged ?

Best Answer: They are double edged. The best way to sharpen them would be by hand with a whetstone.

How does this compare to the Kaizen knives. What is the difference?

Best Answer: SG2 blades have a hammered finish & are made of 3 layers of SG2 steel. They have a Rockwell hardness of 63 & the handles are made of cocobolo pakkawood.
Kaizen blades have a flower Damascus pattern & are made of 65 layers of VG10 steel. They have a Rockwell hardness of 60 & the handles are made of black linen micarta.

Best Answer: SG2 blades are made from 3 layers of SG2 steel sharpened to 19-24°. The handles are made of cocobolo pakka wood.
Evolution blades are made from a single piece of FC61 steel & are sharpened to 24°. The handle is made of glass bead enhanced polymer.
Overall, the SG2 knives are made of higher quality materials, but the Evolution knives are more durable.
