Rockwell of HSC 60?

I am considering the Myobi knife sharpener it says it is designed for knives with a Rockwell of over HSC 60? What does that mean? Is it compatible with the Shun knives I bought previously at SLT?

Best Answer: When selecting a sharpener for your knives, you need to make sure that your sharpener is at least the rockwell of the knives you are sharpening otherwise it will be ineffective. The average rockwell of most knives range between 58 and 62. A Rockwell of 58 will have a great edge and a blade that is more flexible and easier to sharpen, however may need to be sharpened a little more frequently. A Rockwell of 62 would mean that the knife is very hard and will not need to be sharpened often at all, however it is a little more brittle and therefor may chip easier if dropped or used on an incorrect surface. The sharpener you are looking into would be able to sharpen knives with a Rockwell of over 60 and Shun knives like most Asian knives - have a Rockwell of between 60-62. Most of your German/Western blades hold a Rockwell of 58.Please remember that regular honing of any knife will reduce the need for actual sharpening and thus lengthen the life span of your cutlery

What angle does this device sharpen to? I need 9.5 degree (or 19 degree inclusive) for a Miyabi MCD5000 (birchwood) Santoku. Will this sharpener work?
