The BEST product for standard baking!
I have used SAF Instant products professionally and at home. In my opinion it simply can't be beat. No proofing required; add to the dry ingredients. In most cases a second rise isn't mandatory, although it definitely adds to the flavor or certain products. I love the Red Label for standard breads and yeast pastries and the Gold Label for slow rise items like sourdoughs.

A staple in my house!
I've been using SAF instant yeast for years now and can't imagine baking breads without it. It promotes a wonderful rise and stays fresh for a year (or more!) when kept in an airtight container in the freezer. I enjoy the convenience of taking the amount I need out of the freezer and being able to use it without proofing it or even bringing it to room temperature.

I keep this yeast in its package in my freezer at all times, and it always always works perfectly. I'm a fan!

I make my own bread and have used this yeast for years. I get to skip the proofing step necessary with active dry yeast plus this stores nicely in the freezer in an air-tight container for a good year. So handy that way!

BEST ANSWER: I contacted a rep. from Red Star Yeast Co. Their parent company is a French company owned by the Lesaffre family. Thee family originated and still owns saf instant yeast. Apparently the name comes from the Lesaffre name. It is not an acronym. it is pronounced with a soft "a". Hope this helps.
