Pricey and very heavy but worth it
A beautiful Dutch oven, but hard for my daughters to lift when full. We're a family of 6, so anything smaller won't work for meals with guests if you want to serve for example braised veal shanks for 6-8. Outstanding quality

My Favorite Braising Pot
I adore this Staub Cocotte for all braising in the oven recipes. As soon as I received this pot, I washed in warm soapy water and towel dried. I then added some Light Olive Oil and seasoned the interior using the oil and wiping with a paper towel. Once the oil was absorbed, I did a second coating. My first use, I did lightly add oil before searing my pot roast. Excellent searing, the interior is now my preferred finish over cast iron for searing. It is easy to see browning of onions, carrots etc. The lid sits better on the pot. So the interior and lid fitting are preferred to my other high end Dutch Oven for braising. I have the 8.5qt and it is the perfect size for a 3-4lb. Chuck Pot Roast OR individual shanks (veal, pork or lamb). Usually I use aluminum foil under the lid when braising, but with this lid I omit the step and it worked beautifully. It is super easy to clean, cleans quite nicely.
I still love my LeCreuset for soups, chili and other items that I cook stovetop. The Staub bottom for searing and cleaning however is a significant improvement. I do NOT find the Staub any heavier. Plan to purchase the Staub Steam Grill Pan. The Cherry color is not nearly as bright as the photo, The Grenadine color is more burgundy wine-maroon. The Cherry looks best with my red range and oven knobs.

Bride requested similar pan. I think the Staub, with the buttons in the lid to circulate moisture, and the cute handles, is a better pan.

What are the dimensions and weights of the 7 quart size and the 8 1/2 quart size Staub cocottes?

Best Answer: 7QT Overall: 6.4" H x 15" W x 11.8" D; 8.5QT Overall: 7.2" H x 17.2" W x 11.2" D per another retailers website that sells this product. As this is an expensive item, I would ask your local SurLaTable to reconfirm the dimensions for you before ordering or contact Staub directly for clarification. I have the 8.5 and it is not too large, works perfectly for roasting a whole chicken, shanks for 4-6 people.

Can you explain how putting ice cubes on the lid works?

Best Answer: Adding ice cubes to the lid will cause moisture to condense on the underside of the lid & fall onto the contents, allowing the cookware to continually baste the food you're preparing.
