Staub vertical roasters feature a large center spike that radiates heat through the center of a chicken and other poultry for exceptionally even cooking. The multi-coat enameling ensures strength and creates a deep, vibrantly colored “majolique” finish similar to fine ceramic.

Because of the cast iron base under the enamel. I've used different designs and know vertical roasting is far healthier. And, because it cooks on the inside as well as the the outside, it cooks FASTER than conventional methods. It could easily 1/2 to 1/3 the time compared to standard roasting. (Also was happy to see gray as a color option.)

I purchased this roaster from Sur La Table for my daughter a couple of years ago and she loved it! I decided to buy it for my husband for Father's Day since he mentioned what a nice roaster she had when we were moving her to a new place a last week-end.

I've read that cooking chicken on a vertical roaster produces tender juicy chicken with crisp skin, plus tasty drippings at the bottom.

I choose this roaster because it looks sturdy and the stand is better shape to hold the any size bird without being wobbly. I have tried different vertical roaster and never satisfy specially since the base holder was to wide and shallow.

How big of a chicken/turkey can this Staub Vertical Roaster support/hold?

BEST ANSWER: The critical issue is the distance from the lowest shelf in your oven to the bottom of the broiler (or whatever is the lowest point on the ceiling of your oven) - minus a couple of inches for clearance while moving the vertical roaster with bird in & out of the oven. My oven isn't especially large, and I can probably fit a bird that's at most 11 inches from tail to point where the head was chopped off. Measure your oven and then take a tape measure with you to the grocery store.
