Wow!
After years of struggling with traditional finish metallic bakers, I splurged for the Staub. What a difference! I made a Czech ""bubble cake"" with fresh cherries. The crust was perfect with no burned spots and the inside was evenly cooked. Clean-up was effortless. Where my old pan would require vigorous scrubbing and even some fingernail work after this kind of recipe, the Staub cleaned up with tap water alone the first time out. The only seasoning effort was a little bit of butter on the baking surface after warming it for a few minutes on the stove top

The 6 1/4 qt. baker length is listed as 15". Is 15" the actual inside cooking area -- or does it include the handles?

BEST ANSWER: That's the cooking area. Here are the dimensions with handles:
3qt-15" x 7 3/4" x 2 3/4" high
6qt- 18 1/2" x 10 1/4" x 3 1/4" high
How deep is this baker?

BEST ANSWER: Depends on the volume. 6.25 qt is just short of three inches deep. The 3.25 qt is just over 2 inches deep.
Is this pan made of metal or ceramic?

BEST ANSWER: It is enamel over cast iron, so it has the heating / cooking properties of metal(cast iron) but does not have to be seasoned and will not react with ingredients ( turn color or cause off flavor)
can it go from freezer to oven?

BEST ANSWER: I wouldn't recommend it. It's suggested that this baker be used on low to medium heat & it needs to cool before it's washed, so I don't think extreme temperature changes are a good idea.
