Inspired knife from Wustof
I pride myself on the kitchen utensils and gadgets I use in both professional and personal settings.

I read a small blurb about this knife in the newspaper. Admittedly, I considered the blade design a gimmick, but my interest was piqued. I had a gift certificate for SLT, saw it in store, and snatched it up.

That night I made a version of my mother�s ratatouille with onions, romas, red & yellow peppers, italian & mexican zucchini, eggplant, pancetta, garlic, and shallots. NOTHING sticks to the blade. I actually had a hard time adjusting to not taking breaks to decouple the ingredients from my knife every couple of slices. This knife is incredibly sharp (which is to be expected from the Wustof Gourmet line). My tomatoes were piled in a perfect dice � the blade didn�t crush them at all.

Next morning I moved onto prepping for my juice that I have aptly named Green Power (kiwi, honey dew, green apples, pears, lime, cucumber, kale, ginger). I cut with efficiency and experienced a significant decrease in prep time thanks to nothing sticking to the blade. The holes on the blade provide the benefit of what you get from a traditional hollow edged knife. . . but on steroids. And the ridge further accentuates this feature by preventing slices to pile up on the blade.

I�ll be honest � this is a weird looking knife, and I wanted to hate it � I�m not big on over-designed blades. The Ridge knife turned out to not be over-designed, but rather a design evolution of a standard chef�s knife.

This is similar to what happens with me and BMWs. When a new model of the 7 Series comes out, I despise the new model for a while simply because of how much I loved the previous version. Time goes on, I learn to love the newest version, and the cycle repeats. Moral of the story? Trust German engineers and trust their design

Amazing knife for they money!
This knife has amazing functionality. I prepped a ""chopping-intense"" dinner and this knife cut through everything with ease and not a single piece of food stuck to the blade. Needless to say this cut down significantly on my total prep time. For the money, this is a great blade and will be a staple in my kitchen

Not for left handers
The knife is well weighted,sharp, and has a good feel in your hand. It works well for me, but the ridge is only on one side and that decreases its uniqueness for left handed chefs ( my wife). In less than 1 month of use, one of the rivets has come out. I like the knife overall, but am concerned with the sturdiness. My wife would like a left handed version

Love it! - Most of the time!
This knife works very well on larger items like onions, tomatoes, squash etc.
Small pieces, i.e. chopped garlic or herbs, that stick to the bottom of the blade are a little harder to remove because the holes in the blade don't allow you to just wipe them off.
But in general, I love the knife

This knife did not perform as advertised.
Since my purchase I've been using this knife for the last few days to cut potatoes, yams, onions, etc. and the cut pieces still stick to the knife and I have to slide them off by hand. However fewer pieces stick to this knife when compared to another regular Wusthof chef's knife that I own (without holes & ridge). It definitely is made from good quality material and forged very well just like the collection of German made Wusthof kitchen knives that I work with. However, the features of this gourmet ridge knife just didn't work for me as advertised. That's why I'm giving it a poor rating on features but high rating on quality.
I definitely would recommend Wusthof brand for kitchen knives in general, but not this particular one

Wusthof Does it Again
I thought my collection of Wusthof knives was complete till I tried out this knife. Now I can't imagine life without it. Easy to hold and slices sticky foods like potatoes, tomatoes and even cheese with ease. I love this knife

Really Impressed
I made a Greek salad last night for a crowd. Needless to say, I had a lot of tomatoes and cucumbers to chop. I used my new knife and was impressed by how little stuck to the knife. I was able to get my chopping done more quickly because I wasn't spending time cleaning off the blade.

Definitely worth the purchase.

Thanks again Sur La Table for giving me another knife to add to my growing Wusthof collection

We own numerous Wusthof Knives and thought this one as touted we be a great addition to the ""arsenal."" Alas, I find the non-stick holes really do not perform as advertised. I still prefer the Wusthof Santuku as my go to knife. This one is very nice, has a good feel to it, but..

Great all around kitchen knife
Love this knife as it handles all my chopping and slicing needs perfectly. No need for multiple knives when you have this chef's knife. I would definitely recommend it!

"Wow, it's sharp!"
You can even slice ultra-thin mozzarella or sticky cooked yams and they won't stick. Don't know yet how well it will re-sharpen, but for the moment it's a dream knife

The new ridge on the blade prevents food from sticking, so the cook is not having to stop and clear the blade�but can chop, non-stop.

It would be great if.....
I was so excited to add this knife to my collection. The idea of the knife that would keep items from sticking as you chop seemed so intuitive and so smart. The knife itself is fits in your hand well, is balanced, etc. However....the unique feature is the ridge that gently ""pushes"" items off as you cut...and it is only on one side. So the left-handed cook is out of luck! I am very disappointed!!!

great technology
Excellent design on this knife. I hate chopping sticky items that stick to the knife. It is so quick to chop all kinds of items as they don't stick to the knife so there is no need to stop and clean items off to keep slicing when prepping your meal. I looked at this for quite a while since I wasn't sure I really needed it but it was totally worth it. I have just used this to replace my usual 8 inch chef knife.

Gadget knife with a funny feel
I've used this brand of knives forever and love them and always looking for a new chefs knife to add to my collection. The heft and feel of this knife isn't great and the cutting quality isn't as good as other chefs knifes of this caliber. I know the selling point is the release of the food when cutting and it does do that, but this knife was used 2 or 3 times in my kitchen and then put away for good

Not for left handers
My bad in that I did not read the reviews prior to on line purchase, thus did not see that the primary feature is useless if you are left handed, as I am. Wish that this was more prominently featured in the description.

If you are left handed do NOT buy this knife

This is an awesome knife. It doesn't stick at all because of the unique design. I wish they would make a whole line of these knives. It cuts like ""BUTTA""!

A Nice Addition
I follow a friend of mine, who is a truly talented cook. When she recommended this knife, I took the recommendation to heart. I haven't used it much yet, but I really like it. When I slice or chop, slices slide off much more easily than similar knives without the ""ridge'. I can't say it's truly that much better, which is why I gave it 4 stars. But if you need a new knife, I would highly recommend it

Great knife, but not for Lefties
The "ridge" is only on the right side of the knife which makes it useless for left-handed slicing. It's a fabulous knife otherwise - weight, balance, edge-holding, etc.
