The Shun Classic honesuki is a traditional Japanese-style boning knife with a triangular shape and the stiffness required for deboning meats. Sharp, durable and corrosion-resistant, the unique curved blade deftly works around the bone, joints and flesh of meat, poultry and fish.

  • Shun Classic knives feature a core of proprietary VG-MAX super steel clad on both sides with 34 layers of Damascus stainless steel
  • High-density VG-MAX steel is tempered to a Rockwell hardness of 60–61 and provides incredible edge retention
  • Razor-sharp blade makes removing breasts from bone a snap, and cuts joint cartilage with ease
  • Scoring and trimming is a breeze—use the blade’s spine for scraping
  • Constructed using the kasumi method, the traditional Japanese process for creating samurai swords
