  • High-density VG-MAX steel is tempered to a Rockwell hardness of 60–61 and provides incredible edge retention
  • Razor-sharp blade makes removing breasts from bone a snap, and cuts joint cartilage with ease
  • Scoring and trimming is a breeze—use the blade’s spine for scraping
  • Constructed using the kasumi method, the traditional Japanese process for creating samurai swords

Best knife for cutting up a chicken
I used to use a larger knife, then kitchen shears to cut up a whole chicken. My hands always hurt after doing so. That's why I purchased this knife. It came razor sharp, which made my first chicken very easy to cut. I was amazed at how much easier this knife is to use for this purpose.
