I've been using these for more than 10 years and I'd never bake without them. No need for oil or spray to add calories to your baked items, just put them on the mat and they slide right off. Beautiful product
I rarely bake without it. Cookies, chocolate, pie fillings, or burnt anything comes right off. Use it to bake directly on, or in the drip tray underneath your pie. Stays a bit greasy feeling after cleaning, and after 10 years mine are a bit scratched from cutting and stained but still work perfectly
These mats are simply fantastic. You slip them on a baking sheet and you can bake or roast right on them. I did some roasted green chiles for a dish and all the nasty black burnt stuff came right off with a just a rinse under water. I also like how I don't need to contantly use parchment paper under my cookies. a definate tool to keep in your kitchen if you love to bake.
I use mine all the time when I'm making meringues or cookies (or meringue cookies :-)
Nothing sticks to these things - Just wipe em off with a scotch brite and they're clean. Saves you cleanup hassle, and it's green because you're not using extra parchment paper to line your bakeware. Also, you won't have to use caloric sprays with these mats. Highly recommended
I find these to be totally indispensable, particularly for cookies. One caution; if they don't quite fit your pan and part of the mat is going up an edge, so that the bottom is not in contact with the pan, things will not brown properly on the bottom. A true cookie sheet (with rims only on 1 or 2 sides) is generally better than a sheet cake pan. I also have found them useful as a surface for forming sticky bread doughs. I usually just wipe with a paper towel, but they may be washed if need be. Note that there are temperature limitations (usually 450 degrees) for silicone products- not the thing to bake pizza on
Silpat's changed baking life. Excellent non-stick surface for baking cookies, phyllo and puff pastry, etc. Makes clean-up super easy and you don't have to deal with messy greasing of cookie sheets. Plus you still get good browning for your baked goods. Fits my half sheet pans perfectly.
We use the silpat on our old, dingy and dirty cookie sheets. It is pretty incredible how easy everything from cookies to barbecue tofu comes sliding off. My only complaint is that they still feel greasy after washing but overall- love it

The 11 X 17 is going to be the best size for your 13 X 18 pan. It will be a little smaller than your baking pan, but not by much. This is the largest size that we have in this product.
