Description

Authentically Japanese in design, each knife features 101 layers of forged steel to create a delicate Damascus pattern. Each blade in the Miyabi Birchwood collection is hand-honed using a traditional three-step honbazuke process. The genuine hamon edge—the visible line where flexible outer layers and incredibly hard core layer meet—is reminiscent of legendary Japanese swords.

FEATURES
  • Fifty layers clad on each side of Cryodur-hardened SG2 microcarbide steel core
  • Cryodur process for ultimate hardness, initial sharpness, cutting edge retention, and the best possible corrosion resistance and flexibility of blade
  • Each blade is sharpened twice on whetstones with custom grits, followed by mirror polishing on a leather wheel
  • Blades are sharpened to optimal 9½° to 12° angle on both sides for scalpel-like precision
  • Rockwell hardness of 63
  • D-shape of the natural Masur birch handle creates a comfortable grip and ensures tireless cutting, even with frequent use

They feel great in your hands. In particular the handles. This inludes the engineering on every other aspect of the kives. The excellent steel (material) appearance, etc.

what would be a good sharpener for the set? i found the knives get dull much faster than my previous wustof set. any tips on how to prolong the sharp edges?

Best Answer: Frequent honing will definitely help. A rep from Zwilling once mentioned that your knife should be honed at least once after every 2-3 uses. Once honing no longer seems to be maintaining the edge, I'd sharpen them with the Miyabi handheld sharpener.

Any recommendations as to which 7-piece knife set to get? So many choices... I'm fine spending a bit more if the more expensive ones are really better, but not if there's no real difference. It's just more enjoyable using knives that feel good and cut well. We use them for normal family cooking - nothing extreme.

Best Answer: Bought the myabi evolution set for my son's family. I have purchased knives individually, some of them on sale. I like the sharpness, more western style handle, and a little more weight. They are nice, but a luxury item.
