A beautiful addition to your Thanksgiving table!
I bought the beautiful Mauviel M�collection de Cuisine Roasting Pan as a pre-Thanksgiving gift to myself; my old roasting pan was a years-old, slightly rusted doorbuster that sorely needed replacing. I looked at both the stainless steel and copper versions, and decided on the brushed stainless steel one due to ease of maintenance.

The old-world quality (like other Mauviel products, this is made in France) will not only stand up to your heaviest baking, but also looks great on the table. It also has a manufacturer's lifetime warranty.

The five-ply construction (this roaster is 1_mm thick) means that the roaster heats evenly and retains heat well out of the oven. I love the large sturdy handles for moving the pan in and out of the oven. The included rack and kitchen towel only add to the value

Mauviel, my new best friend!
I love my new roaster. But the next time I use it, I will set my oven to "convect roast". You need not use the rack, all you need to do is, cut a bunch of veggies, and use them as a rack.

l wanted a stainless steel roasting pan. I'm disappointed that the interior of the pan has a finish that is very difficult to clean unlike normal stainless. I felt deceived.

Best Answer: According to the paperwork I received when the M'Collection was first launched, it has a ""2.6mm total thickness for even heat distribution and fast, uniform and controlled cooking."

roasting rack material - carbon steel

Can someone verify that the carbon steel roasting rack does not have any teflon or any additional coating on it besides carbon steel? If it does have a coating, what is the coating made of? Thanks

Best Answer: The exterior surface is reflective. I purchased this last week to roast my first turkey and couldn't ask for a better pan. Our bird was 19 pounds and this pan really held up.

Is it ok to use a metal gravy whisk with this pan? Will it scratch it up badly?

Best Answer: Yes, it will eventually scratch it, but this will happen with any pan where you are using metal utensils inside it. Would recommend using one of the newer wire whisks that have been coated with a thin layer of the silicon.
