Great stove or oven pan
We rarely use our outdoor grill, but I love grilled food. This pan solved the problem! So far, I've used it to grill fish on top of the stove--first, fresh salmon filets, then delicate filets of Dover sole. The results were excellent in both cases. On first try, I failed to read the pan instructions and added olive oil before heating the pan--a "No-no" because olive oil heats fast and smokes. Once I added the fish and lemon juice though things settled down. Wasn't sure about timing the fish. It turned out slightly under-cooked at the center, but not inedible. Would've gotten better grill marks if I'd let the salmon cook a little longer. Despite these "first-use" errors, the results tasted excellent. The Dover sole was even more of a surprise. Was worried because this fish is so delicate. I feared cooking at high heat would dry it out or leave most of it stuck to the pan. Neither problem occurred. I followed instructions this time, heating the pan first and adding olive oil at the last minute before adding the fish. Then watched closely and used a silicon turner to remove the fish the instant it looked opaque. Best sole I've ever made!
