Mathieu Choux arrived in Boise from Burgundy, France in 2001. He opened Le Café de Paris downtown, offering fresh croissants, breads, and a full daily dine-in menu. By popular demand from local restaurants, the Café expanded its wholesale baking options in 2006 to serve the local market. Mathieu closed the Café’s doors years later to focus solely on Gaston’s Bakery and serving much more of the Treasure Valley. The bakery is now located on the Bench and has developed into a national brand via countless community partners, food distributors, and Sur La Table.

- You're pastries were baked fresh yesterday and shipped to you overnight! They are ready to enjoy now or can be reheated for crispier texture in the oven at 300 F for 3-5 minutes. If you want to go above and beyond, slice croissant in half and heat a bit of butter in a pan on medium heat. Toast the sides for a few minutes to get an even more savory, buttery croissant.
- To freeze: Wrap the croissants in plastic wrap or seal in plastic freezer bag. Store in freezer for up to 3 months.
- To reheat from frozen: Croissants can be pulled from the freezer to thaw at room temperature for a few hours. For a faster thaw, the croissants can be removed from packaging and baked in a preheated oven for 7-8 minutes at 350° F directly from frozen.
