  • Ingredients: Unbleached bread flour, butter, all-natural yeast, white cane sugar, dry milk, salt, chocolate baton (sugar, cocoa paste, cocoa butter, emulsifier: soya lecithin, vanilla flavor)
Baking instructions and tips:

  • Take the croissants out of the freezer and let them rise overnight; leave on a baking tray on a kitchen counter for 6 to 8 hours. Time will depend on room temperature.
  • Gently brush on egg wash before baking (scramble an egg in a bowl, add one tablespoon of water and brush the mixture on top of each croissant with a pastry brush).
  • Preheat oven to 375°F and bake for 15 minutes. Let croissants cool before serving.
  • Using a Silpat will keep croissants from sticking to the pan.
  • For ovens with a proofing setting, allow croissants to thaw completely at room temperature, then place them in the oven to proof at 90°F (check on proofing croissants regularly to monitor proofing progress).
  • Convection cooking will bake croissants more evenly. When baking in a convection oven, be aware that cooking times may be somewhat lower and monitor croissants to prevent over-baking.

Quintessentially French Pain au Chocolat
These chocolate croissants are absolutly fantastic!
Anyone who doesn't like these (not enough chocolate) has never has an authentic French Pain au Chocolat. If the pastry is put on the baking sheet/silpat to rise the night before�there will be no issue with proper rise.

You could make your own, but the amount of work involved in making the initial puff-pasty and then preparing/proofing the croissants doesn't even compare to the simplicity of these.

We have gifted these several times and received rave reviews�You won't be disappointed

Great Chocolate Croissants!
My family and I absolutely LOVED the chocolate croissants! They had just the right amount of chocolate in them so they were not too rich. We received them in 2 days after ordering them. We will definitely be purchasing them again!

They need improvement--and chocolate
They are easy to prepare, but there are some problems that hopefully will be resolved in the future: (1) My wife calls this a croissant lover�s croissant rather than a chocolate lover�s croissant, but I think she is too generous. There really is very little chocolate in them. (2) I assume (and hope) that most people will not follow the instructions to put the egg wash on the croissants as step 1 and then let them sit out on a counter for 6 to 8 hours as step 2. (3) The additional $7.50 shipping charge (despite the large print about free shipping) makes them expensive

Average Croissant
These croissants fell a little flat for me. They didn't have that super buttery flavor you get from a real French croissant nor that exterior crunch with all the flaky layers. Even though you could bake them fresh at home, they weren't that much better than going down the street to the local bakery. The chocolate that they fill it with wasn't that high quality either..
