A versatile, maneuverable kitchen workhorse, this chef’s knife is an outstanding example of form fulfilling function. The 7" blade is just a bit shorter than a traditional 8" chef’s knife, but provides all of the functions you need in a user-friendly package.

Both sides of the exquisitely forged VG-MAX “super steel” blade are clad with 16 layers of high-carbon stainless steel to produce a rust-free Damascus-steel surface that reduces sticking and results in less damage to the food being cut.

The ebony pakkawood handle, a fused blend of hardwood veneers and phenolic resin, is D–shaped for maximum comfort. Hand wash. Limited lifetime warranty. Made in Japan.

VG-MAX “SUPER STEEL” CORE The higher density of VG-MAX steel allows it to be tempered to a Rockwell hardness of 61 and still have the flexibility and strength to take and keep a perfect edge. VG-MAX’s natural tendency is to remain straight and true. When blade is used, the edge automatically straightens out and stays sharp longer.

METICULOUSLY CRAFTED Each Shun Classic knife is constructed using the kasumi method, a traditional Japanese process used to create samurai swords. The 16 layers of SUS410 high-carbon stainless steel are pounded to 3/1000ths of an inch, then clad on each side of the VG-MAX core. This 32-layer forged construction gives the blade strength, stain resistance, incredible cutting performance, and an elegant Damascus pattern unique to each knife.

RAZOR-SHARP BLADE With a cutting edge ground to a 16° angle on each side, this is one of the sharpest knives you’ll ever find. Plus, the exotic Japanese steels used in the cutting core ensure that blade holds its ultra-sharp edge without the need for excessive re-sharpening.

Great Agile Knife
The asian chef's knife is an amazing little knife. At 7 inches, this IS, feels and handles smaller than 7 inches. I bought this as a gift and ended up buying myself one. Go figure.

Size : Feels and handles smaller. It's smaller because of the height of the blade.

Shape : Cross between Chef's knife and Santoku knife. Not too curved and not too flat.

Weight : This knife is light. Really light. Feels really agile. I feel like an iron chef using this knife.

Sharpness : Sharp as sharp can be. I am comparing to various knives and brands at this level.

Handle : Handle has a dark wood ring (?) on the handle but can't be seen on the photos. It's gorgeous, it looks one with the blade. The hold (where your thumb and index finger meet - don't know the proper name) of the knife is set at a great angle for me and feels comfortable.

Notes : If you are left-handed do not buy this knife. The handle is shaped for right handed users

Easy Handling
Used this knife at a relative's and couldn't get over how easy it favorite was a tomato and it sliced perfectly. It may not be intended to cut a tomato but you can't get me to believe that.
