Sous Vide Water evaporation problem?

Best Answer: I have not had an evaporation issue. Although, the longest I have 'cooked' with it was 6 hours. There is certainly evaporation in that I can see steam rising from the container. I purchased a plastic lid, which I then cut out to fit closely around the circulator (much cheaper than purchasing the cutout premade), but that is only for my biggest container. Over Thanksgiving, I made a turkey roulade which stayed at 151f for 6 hours prior to serving, without a lid and without issue. It was cooked in an 8 quart container. If I ever found it to be an issue, I would simply purchase a lid for the container and cut it out to fit the circulator. I certainly would not allow evaporation to be an issue in purchasing. BTW, I love the circulator. It works very well.
