Crafted in Seki City, Japan’s historical center for manufacturing samurai swords, Shun knives are heirs to a seven-century tradition of superior craftsmanship.

  • Constructed using the same traditional kasumi methods used to craft samurai swords
  • Features a core of proprietary VG-MAX super steel clad on both sides with 34 layers of Damascus stainless steel
  • High-density steel core provides incredible sharpness and is tempered to a Rockwell hardness between 60 and 61 for incredible edge retention

Perfect knife
It's the hatori hanzo of vegetable knives. Extremely sharp but will get nicks quickly if you are not careful. Very easy to sharpen and maintain a razor like blade. Great balance and feel in the hand. Perfect for most fruits and veggies except for a melon when the bigger artillery needs to come out. Very easy to control, not too large, just the right size

I'm trying to decide between the 4 and 6.5" nakiri knives. What would be examples of what the larger blade could do and vice versa? Pros and cons of each?

You only really need one great chef's knife and both sizes are great. They are balanced, sharp, and lightweight. I would suggest buying a chef's knife based on how it feels in your hand. If it is comfortable to use and if the weight feels good, you cannot go wrong with either of these. My husband uses the 6.5 for everything! It does need to be sharpened often. You can not let it air dry or it will get spots. In other words, you do have to maintain them. Highly recommend brand and knife. You can check out global if you haven't already.
