Okay saute pan
This pan is all right. I wish I got a slightly larger/deeper one to reduce the amount of splatter that ends up outside the pan. But the nonstick surface seems to be durable. We'll see in a few months how it continues to hold up. I haven't used the lid with the pan, so I can't comment on that. I do like how easy clean-up is!

I love this pan
This was a GREAT purchase!! I use this pan twice daily. Non stick, browns veggies nicely, great size, nice weight, very easy to clean, looks beautiful. I am thrilled with my purchase. Have had it for approx 1 month and it makes me look forward to cooking!! I highly recommend it!

great covered pan
This covered pan is just right for a family meal, the right size, cooks evenly, heats up quickly, but the handle stays cool.

Sur La Table Store
I have the 6 quart version of this pan and use it for stews I would normally cook in a Dutch oven. BUT cooking it in a pan like this makes the cooking more even, without as much stirring. PLUS things don't fall out of it because of the high sides, like piles of fresh vegetables in ratatouille. I'm getting the smaller version for smaller portions. GREAT pans!

Can the nonstick surface stand metal utensils or must you use nylon and wood only?

do you have to use fat (oil, or cooking spray) with this pan, or can brown meat, sauté vegetables without it?

Best Answer: I don't use oil to brown meat in this pan. I have not tried to brown vegetables in it without a tiny bit of oil whether left over from the meat or wiped on the bottom of the pan. I'm very happy with the pan, especially the size.

What is the Sur la tab Non-stick 10" pan warranty? How Long can I expect these pans to last, if taking care of properly? I hang each pan carefully, hand wash w/ soap, and only use olive oil, butter or other oils to cook with; no spray i.e. Pam.

Best Answer: Hi Julie. I've had my full 10 pc set for over 15 years. Only reason I had to replace my 10 inch skillet was due to a careless roommate (ex now) that cut meat in side of my skillet while cooking and destroyed the non stick finish inside the skillet. I have taken care of my set, much like you have mentioned above, re-hand washing and drying. I stack my set in my cabinet, using paper towels between each pan to avoid scratching.
Like I said my set is 15 years old, I use low heat settings and hand wash and dry and I think my set will last another 15 years easily. Good luck with your set Julie.

Since there appears to be no vents in the lid, is there a problem with too much moisture gathering in the lid?

Best Answer: I have been using this pan for a few months have had no problems. Usually don't cover while sautéing veggies or browning meat but if I am sweating down onions, etc .or reducing a sauce the cover works well.

Best Answer: It is not necessary to add fat, however I recommend a slight spray of olive oil from a mister. DO NOT use commercial non stick spats such as Pam, they have some other chemical on them that is not good for the surface.

can I use his pan with lid in the oven? If so, what is the highest temperature you would recommend?

Best Answer: I have used it in the oven with the lid at a temperature of 400 degrees. Without the lid I have used it in an oven at a temperature of 450 degrees. I have been very happy with this pan. I use it almost every day.
