Exclusive This versatile chai dao combines the smaller size and maneuverability of a santoku with the cutting power of a chef’s knife, resulting in a multi-purpose workhorse that’s perfect for chopping, dicing, slicing and more.

Thanks to a curved belly, the chai dao is ideal for rocking over herbs while mincing, and the wide, broad blade is great for smashing cloves of garlic or transferring foods from cutting board to pot. A hollow-ground edge helps prevent food from sticking. Wüsthof Gourmet blades are laser cut and precision stamped for razor-sharp edges and resist corrosion and dulling.

Unique Shape for Unique Uses
I bought this on sale - was not planning on buying a knife, but it seemed like a small price for a LOT of knife. What you may not be able to tell from the photo is that this is a wide knife, almost a little like a cleaver, but lighter weight. the wide blade gives me lots of knuckle clearance, and allows for smashing/chopping of anything on the cutting board! My only complaint is that it doesn't fit into my knife block - but I have an in-drawer solution so I just keep it in there.

I looked at some of the other reviews, and it looks like they are confused about the difference between Wusthof gourmet and classic. Classic is forged with a full bolster. Gourmet is lazer cut and therefor lighterweight. whoever said this was not sharp must have gotten a knife that had not been finished. Mine is razor sharp and I can sharpen it again and again because the entire blade is exposed (no bolster like in classic).

not sharp at all
Got this couple days ago , today I tired to cut some peppers , soooo bad , not sharp at all , worse than the one I bought only for $15 , not worth the $$$$ at all , I used the sharpner so has some scratch near the blade , don't know if I can return this

W?sthof? Gourmet Hollow-Edge Chai Dao
I was somewhat disappointed with the purchase. I have a set of the Wusthof Classic knives and wanted this knife to match the set. I noted when I received this one that it is not the same classic style and the tang is not part of the handle like the Classic style so it is not exactly part of the set. I hope that it has the same blade material and quality.
