Featuring exceptional heat transfer and the ability to be preheated to extremely high temperatures, M’steel cookware is perfect for searing, browning, stir-frying and more. Constructed from extra-thick carbon steel with riveted steel handles, this heritage-quality cookware will endure a lifetime of use.

Paella pan features a generous cooking area and two sturdy handles for easy transport to and from the table—great for paella and other family-style dishes.

Care & Usage Show

  • Hand wash with warm water only immediately after use. Dry completely. Wipe with oiled paper towel and store in a dry place. Carbon steel will change color and develop a patina with use—this is natural and does not negatively affect the pan’s performance
  • Oven safe to 680°F
  • Special-Care Instructions: M’steel cookware ships with a beeswax coating that must be removed prior to use. To remove coating, scrub with hot, soapy water. Pan must be seasoned to prevent corrosion. To season, dry pan completely after cleaning, then wipe with a thin coat of flavorless cooking oil. Heat until oil liquefies, then turn heat off and wipe off excess oil. Repeat as necessary

I love the Mauviel pans that I already own. I also wanted a carbon steel pan because I am going to use it on my barbeque and need it to handle very high heat. I considered an inexpensive Spanish carbon steel pan and a Lodge pan before I decided to pay the extra for a quality product that will last.

Do the Mauviel M'Steel pans have lids that will fit for purchase?

BEST ANSWER: Because paella pans are traditionally not covered when in use, no lids are available for these pans.
for the 15.7" pan what is the 17.1" dimension. Not sure why there are two numbers. Does that include the handles?

BEST ANSWER: I absolutely love this pan. But the measurements above don't really match mine. The bottom of my pan is 13.5"; the top radius is 16"; the depth is 2.5"; and the width with handles (could be important on oven or grill size) is 19". Sorry. But you will not regret owning this pan if you like to make paella!
Do we know the thickness of the m'steel pans -- e.g. the m'cook/m'collection series appear to be ~2.6mm thickness?
