The best item in my kitchen so far
I am not a pro at all, just someone learning new tricks; this amazing tool is perfect for me. It is a great chef knife, the slightly shorter length makes it easy to maneuver and you get a great control + comfort on it. It is so sharp and goes thru any fruit, meat or veggie like butter :). I simply love it!

Best knife of my life. I was used to an 8" knife so I knew it would be a challenge to get used to a shorter blade but it's just so beautiful it's worth it. If they came out with a longer one I would buy it in a second. This knife is so comfortable and well balanced. It cuts everything so smoothly and I work in a kitchen. I use this knife for slicing, dicing and even cleaning proteins. It holds a very sharp edge.

I like the Santoku form and this is a high-quality,hard-steel (high carbon stainless) Japanese-made knife. Rockwell hardness rating (HRC) about 61. I like the small detail touch of the red "separators" in the handle, also. The knife takes an extremely fine edge and came from the factory quite sharp (certainly sharp enough to satisfy most users). But it can be made even sharper than that with just a little effort.

This is my fourth Miyabi Kitchen knife. The quality is superb for the price paid. My wife and I cook frequently, so we appreciate the sharpness and handling for lengthy cutting and chopping episodes - on the weekend we often make four or five meals for the work week ahead to eliminate spending a lot of time in the kitchen after a long day at work.
The Miyabi knives stay sharp due the craftsmanship during manufacturing them. I have good quality stones to keep them at their cutting best.

BEST ANSWER: The spine on this knife is 1/16" wide.
Is this knife 7 inch? I could not find this information in the product details.

BEST ANSWER: From the tip of the blade to the end of the cutting portion of the blade I measure 7 1/4 inches. From the tip of the blade to the tip of the handle I measure 12 1/2 inches.
My dad is looking for a "long handled knife." How long is the handle on this one? How does it's length compare to other chopping knives?

BEST ANSWER: This is one of favorites knife. It has a German handle I feel like size of the knife is a good fit for anybody and also the length of the knife is good for a lot of different kinds of cutting and chopping vegetables. I like the shape of the blade for dual purpose chopping and slicing. If I had to recommend a knife from my collection. This knife would be my first recommendation for everyone.
Which knife weighs less: the Zwilling Pro Rocking Santoku or the Miyabi Evolution Rocking Santoku? I couldn't find a weight specification in the descriptions of either knife.
