Worth the wait!
As an amateur chef, retired heart surgeon and knife collector, I have always been interested in knives that are razor sharp, hold their edge and are well balanced. The aesthetics of the design, choice of materials and grip size are all wonderfully combined in this outstanding 6"" Kramer chef's knife.
I have watched this knife with great anticipation since it's inception. Of the many excellent knives I regularly use, this is by far my favorite and the current price makes it a hands down winner over the competition. The Sur La Table web site has outstanding information from Bob Kramer on the construction and care of these exceptional knives. I am exremely satisfied

Why did I wait so long?
Years ago, I bought a carbon steel utility knife by mistake. I wanted stainless and was appalled by the way the new knife darkened and got small rust spots. Of course, I knew nothing at the time about the care and feeding of carbon steel. I recently bought my first two Miyabi SG2 series stainless knives, and I own a Shun santoku knife. I thought they were the best knives I'd ever used, until I tried the Kramer 6"" carbon steel chef's knife. It sliced through the thick end of a very large carrot with very little pressure from me and enabled to slice vegetables very thinly because it is so sharp. The size of the blade is no problem because I keep all my knives on a magnet strip. I am in love with the feel and performance of this knife. I find caring for it properly to be no problem, and nothing less that it deserves. When I recover financially, I'm going back for the paring knife. These are incredible

Excellent Knife
My wife says this is the best cutting knife she has ever put in her hand (guess I should be careful knowing that)! This knife cuts cleanly, throughly, and easily. So much so that we are getting the 8" knife in the Bob Kramer collection for larger culinary cutting projects. and we will get more too, pairing and chiefs are the next we will get. Well worth the investment.

Super product line
I also have the 10 inch version of this. Easy to sharpen and yet long lasting edge. It will patina--deal with it. The 6 inch is perfect for shallots, Brussel sprouts and small stuff. Spine and rear of blade is polished and rounded so it is comfortable to grip. Handle is a fine piece of craftwork.

I have the 10 inch Kramer carbon steel chef knife and it is as superior to my Global knives as the Global knives are to western style kitchen knives. The Globals are good. This is another level. And the shape of the handle and the rounded back of the blade fit the hand very well.

Will Sur be offering the Kramer carbon knives as a set like the Shun Kramer knives? Does the Shun wood block fit these knives?

Best Answer: Bob Kramer has spent nearly two decades reducing the craft of knife making to its essence, creating his original artisan knives on his own from start to finish in his small studio. There, he forges the best raw materials and a relentless pursuit of perfection into some of the most beautiful and sought-after cutlery in the culinary world. So it is no wonder that the demand for these knives is so high.We will be offering these knives as a set sometime in the fall, however I am currently unaware of an exact date. These knives also do fit into the Shun wood block

Where is the Kramer Zwilling knife made?

This web page says the Bob Kramer Zwilling knife is made in Japan! In Seki City.Is this true? Or is it made in Germany
