I currently tend to use a 6" chef knife for a lot of prep work, but I think this size will be even better, and I like the Bob Kramer Carbon knife line a lot.

I have several other Bob Kramer carbon knives and they are great. I couldn't believe how much better they cut than other knives. I am slowly replacing other knives.

As a prep cook I wanted a good set of knifes to aid me at my job. I wanted to test the steel in a professional kitchen. This straight carbon steel knife is fantastic extra sharp the edge last a long time and I rarely had to hone the knife. However, after one week of use, the patina came in and it started to rust. Granted I knew the consequences of straight carbon and it comes with Camilla oil to maintain it, but I work all week and I don't have time to maintain it, unfortunately I returned it.

CURIOUS I SEE ON EBAY ETC. KRAMERS BY sHUN & zWILLING WHICH IS BEST? I HAVE A FEW SHUNS NOW, ALONG WITH wUSTOFS & hENCKELS, SABATTIERS ETC. ALWAYS LOOKING FOR BEST.

BEST ANSWER: Any knife works if it is sharp. I use a Handy-Sharp I got at a gun show.
It is a carbide cutter held in a plastic frame. Light strokes on each side of the blade will keep the edge ture and sharp. I have no connection with Handy-Sharp, I keep it by my TV chair and work on all sorts of knives in the evening. It does a good job on pocket knives. As you use it, you can feel the blade edge roughness going away. Light strokes will develope the feather. It also works on my Fiskars scissors.
I also use a diamond steel to keep the blade gliding through tomatoes. I only have the Zwilling Kramer and I like it.
