The Miyabi Kaizen collection combines advanced ice-hardening techniques with the artistry of traditional Japanese craftsmanship. The knives are carefully crafted with a vg10 “super steel” core that is surrounded by a graceful Damascus pattern that exposes the meticulously forged 65-layer steel construction.

Blades go through a CRYODUR four-step ice-hardening process for superior strength, flexibility and corrosion resistance. The edges are then hand-finished by master craftsmen using a traditional three-step honbazuke blade-honing technique for a lasting edge. The resulting blades are optimally sharpened to precise angles for outstanding edge retention.

Ultra-durable black micarta handles feature mosaic pins, eye-catching red accents and logo end caps. Made in Japan.

An upcoming knife name with big expectations...
I purchased this 8 inch knife not knowing what to expect, but wow! What a surprise! I cut tomatoes, potatoes, meats, fruits, etc. for about an hour to really feel it out and I am sold on it. I am currently an user of Global, Henckel, and Mercer. I would compare this on par with a Global or Shun. Super sharp, perfect balance at the bolster, super hard blade, and just the right weight. Miyabi was developed with the help of the original Iron Chef, Chef Michiba. Later, JA Henckels purchased Miyabi in order to spread the use of these great knives. Chef Morimoto also helped design these and is a big user of them. Henckels owns them, but Miyabi still makes them. They are also cut to a single-beveled edge so make sure to sharpen properly. These knives are on par with Shun and are an upcoming brand that may eventually over shadow companies like Shun and Global. Hand wash only

My first experience with a value priced Japanese knife and I have to say I'm very very pleased! I own a far more expensive 270mm Nenox Gyutou and know what can be had at a much higher price. This was my first experience with a more traditional Japanese handle and I have to say it is fantastic. For the money it's a wonderful knife. If you are used to German chefs knives these will take a little getting used to as they do not have the mass the Germans posess. It's worth making the change though as these are sharper, hold a better edge and are far easier to wield..... Be warned make sure your guide hands' fingers are rolled under or risk loseing a tip or two and not realizing it for a two or three count, very sharp......

"Nice knife, and crazy sharp"
This is a great knife, excellent balance, comfortable handle, and very sharp...just ask the empty spot where the end of my finger used to be haha

Great knife
This knife was an excellent purchase. I love it. It's very easy to handle and sharp as heck. I needed to try it out in order to see if it was worth buying the collections. It certainly is. I will buy the set of Kaizen knives after trying this one out. I definitely recommend it to anyone who would like to buy this knife.
