Description

The Miyabi Kaizen collection combines advanced ice-hardening techniques with the artistry of traditional Japanese craftsmanship. The knives are carefully crafted with a vg10 “super steel” core that is surrounded by a graceful Damascus pattern that exposes the meticulously forged 65-layer steel construction.

Blades go through a CRYODUR four-step ice-hardening process for superior strength, flexibility and corrosion resistance. The edges are then hand-finished by master craftsmen using a traditional three-step honbazuke blade-honing technique for a lasting edge. The resulting blades are optimally sharpened to precise angles for outstanding edge retention.

Ultra-durable black micarta handles feature mosaic pins, eye-catching red accents and logo end caps.

Great Knife!
Great knife at a great value. Very well balanced and east to sharpen. Highly recomend for all users who want a great knife at a good price.

Great for my small hands
I have tried a couple other chef's knives and found them clumsy. I am short and have small hands and the 8" kaizen chef's knife is a wonder to me. It is not too heavy or large and has the benefit of a handle with a bit of texture which prevents if from slipping in my hands. I am not a chef - but I am a seasoned home cook who chops a lot. I bought the miyabi sharpener to keep the correct edge and I love the whole system. My first miyabi was the large paring knife that was a gift but the chef's knife was so expensive I tried others before giving in.

Great knife
This knife was an excellent purchase. I love it. It's very easy to handle and sharp as heck. I needed to try it out in order to see if it was worth buying the collections. It certainly is. I will buy the set of Kaizen knives after trying this one out. I definitely recommend it to anyone who would like to buy this knife.

Chips in blades!!!!
While I have loved these knives, they have become chipped quite badly. I should have given it a 1 star but they were such good knives when I first got them. However, the value of a knife is only as good as the strength of the blade. Had I rated these when I first got them, I would have no doubt given them a 5 star rating. I would guess that anyone who first gets these knives is super excited.

Just wait, though. You will all want to rate them one or two stars after a year worth of regular use. We take extremely good care of this set. They are never washed in harsh chemicals, never put in a dishwasher, and are never stored in a drawer with other utensils. I paid nearly $1500 for the set that I have (seven knives with the sharpener). I think it is ridiculous that they would cost this amount of money and not maintain their strength.

I cannot recommend this knife
Upon light use (no heavy chopping or trying to cut through bone), the edge chipped on this knife. It is too brittle.

Is this the same knife as the Fusion, but with a traditional Japanese handle

Please explain any other differences: i.e. Rockwell hardness of steel, thickness or geometry of blade, etc

BEST ANSWER: The blade of the kaizen is from the 5000 line and while it has a similar look to the fusion, the fusion line is from an inferior 600 line and not all the spines are rounded on the 600 line for comfort like the kaizen line. The kaizen bladed are stronger and have better edge retention.

How is this knife sharpened at home? European or Japanese bevel?

BEST ANSWER: Miyabis are double beveled, sharpened and made in the style of Japanese with a razor sharp thin angle but it is sharp on both sides like western knives.
The last picture that is shown along with the kaizen knife I cannot find anywhere. I know there is one called the Fusion, but I cannot find the exact blade design. Where can I find that exact knife that is shown along in the last picture with the kaizen? I believe its the Fusion Rocking Chef's Knife, thought cannot find it.
