Description

The Miyabi Kaizen collection combines advanced ice-hardening techniques with the artistry of traditional Japanese craftsmanship. The knives are carefully crafted with a vg10 “super steel” core that is surrounded by a graceful Damascus pattern that exposes the meticulously forged 65-layer steel construction.

Blades go through a CRYODUR four-step ice-hardening process for superior strength, flexibility and corrosion resistance. The edges are then hand-finished by master craftsmen using a traditional three-step honbazuke blade-honing technique for a lasting edge. The resulting blades are optimally sharpened to precise angles for outstanding edge retention.

Ultra-durable black micarta handles feature mosaic pins, eye-catching red accents and logo end caps.

Great Knife!
Great knife at a great value. Very well balanced and east to sharpen. Highly recomend for all users who want a great knife at a good price.

My first experience with a value priced Japanese knife and I have to say I'm very very pleased! I own a far more expensive 270mm Nenox Gyutou and know what can be had at a much higher price. This was my first experience with a more traditional Japanese handle and I have to say it is fantastic. For the money it's a wonderful knife. If you are used to German chefs knives these will take a little getting used to as they do not have the mass the Germans posess. It's worth making the change though as these are sharper, hold a better edge and are far easier to wield..... Be warned make sure your guide hands' fingers are rolled under or risk loseing a tip or two and not realizing it for a two or three count, very sharp......

Great for my small hands
I have tried a couple other chef's knives and found them clumsy. I am short and have small hands and the 8" kaizen chef's knife is a wonder to me. It is not too heavy or large and has the benefit of a handle with a bit of texture which prevents if from slipping in my hands. I am not a chef - but I am a seasoned home cook who chops a lot. I bought the miyabi sharpener to keep the correct edge and I love the whole system. My first miyabi was the large paring knife that was a gift but the chef's knife was so expensive I tried others before giving in.

Great knife
This knife was an excellent purchase. I love it. It's very easy to handle and sharp as heck. I needed to try it out in order to see if it was worth buying the collections. It certainly is. I will buy the set of Kaizen knives after trying this one out. I definitely recommend it to anyone who would like to buy this knife.

Is this the same knife as the Fusion, but with a traditional Japanese handle

Please explain any other differences: i.e. Rockwell hardness of steel, thickness or geometry of blade, etc

BEST ANSWER: Yes, both of these knives have the same blade. The Fusion has a Western style handle, where as the Kaizen has an Eastern style handle
Is this knife full tang ?

BEST ANSWER: The weight, balance and similar metal collar and end on the handle tell me that it is full tang.
How is this knife sharpened at home? European or Japanese bevel?

BEST ANSWER: It came incredibly sharp, and has stayed that way. We have not needed to sharpen. Not sure on the bezel. We tried several of the Japanese and German knives and this one was the favorite based on weight, balance and ease of grip.
