As soon as I saw this featured on the website, I knew I had to have it because I love to grill but use gas instead charcoal. I don't normally smoke things on the grill so I was a little disappointed when I received the box because it didn't come with a recipe book or tips on how to use it to get the best results.
A previous reviewer made it sound so easy so I followed the instructions on the box exactly, soaked the chips, oiled the cooking surface, bought a 3 lb. chicken, rubbed it with seasoning and put it on the grill (using an oven thermometer right on the platform) and cooked the chicken at around 300 degrees. In 1 hour & 15 minutes the chicken was cooked through, moist and delicious, but no smoky flavor whatsoever. While I never lifted the lid during the cooking process, I peeked through the sides of the grill and never saw any smoke. The water reservoirs still has about a 1/4 inch of liquid in them each and the wood chips looked a little roasted but not much burn or char.
I want to try it again, but could use some tips from Sur La Table. There is nothing listed on the website
I was really looking forward to using this product. I had seen it advertised and thought that it could bridge the huge gap between an all day traditional smoking event and a quick, but less flavorful gas grilling session. (I have two traditional smokers: one propane, one charcoal) I used the device on a gas grill and tried ""smoking"" a 4.5 pound chicken. PROS: The device is well crafted. It is all stainless steel and the liquid reservoirs are seamless, so they do not leak. It is also 3 separate pieces, so it's relatively easy to clean. CONS: The design of this device is its major flaw. First of all, the key to smoking meat is to engulf the food in smoke, while maintaining a lower cooking temperature. This leads to tender, smoky meat. The problem here is that the chips are directly under the food, so you will never get the chips to smoke unless you really crank the heat, thereby cooking food too fast to absorb the smoke. I cooked my chicken for over two hours @300 degrees. There was zero smoke and no char on the chips. The chicken might as well have been cooked in the oven, since there was no smoke and all indirect heat, thanks to the platform. This product is a great idea, I just can't imagine how one would get it to work as advertised. If I could return it, I would
I received this as a Christmas gift and finally tried it yesterday cooking a small (2 lb) pork roast. It cooked fine at high temperature. The wood chips are so far away from the gas flame they didn't start to smoke until the roast was almost done. That's a waste of smoke. There are also heat-engineering issues. Due to the temperature difference between the smoke box portion and the liquid resevoirs the top grate warped (it comes back into shape when cooled) and again the higher heat under the smoke box portion causes that portion to expand enough to make an interference fit making it very difficult to pull out to add more water
I bought this two weeks ago and tried it last week. It is actually amazing how ""smoked"" the chicken tasted. I used hickory chips and just plain water in the liquid reservoir. Juicy and smokey and this was on a gas grill. It reminded me of the BBQ flavor I used to get on my Weber kettle before I switched to gas. I will get a lot of use out of this
We used our grill top smoker last night with some pork tenderloins and they turned out excellent. In order to get the chips smoking, we put them on the grill about 15 minutes before cooking the tenderloins. By that time the apple wood was smoking and gave the meat a sweet, delectable flavor. Will definitely try different rubs, wood chips and meats and fish the rest of the summer
We've used this product twice and followed the directions exactly and there is no smoke flavor at all because the wood chips don't smoke. The platform itself is a bit small and would not be able to accommodate a full rack of ribs even if you cut them in half. This will be donated or put in a garage sale
Have used this grill accessory a couple of times. I have a large smoker, but was interested in this accessory because I could smoke a small quantity of food without cleaning the large smoker. I found food to be cooked in a reasonable time. However, using the grill smoker at recommended low temperature will not get the chips hot enough to produce a desired amount of smoke. Higher temps result in more smoke but burns meat on outside. Plan on trying use without soaking chips. Hopefully this will improve performance
I have a smoker and have done indirect cooking on a grill with smoke. I knew this device was questionable as advertised. (I see now that several reviewers verified this shortcoming.) But, I liked that it was stainless steel. I used the chip tray and the liquid reservoirs over the burners while cooking a Thanksgiving turkey at the other end of the grill. The applewood chips never smoked but they did char and add flavor satisfactorally. BTW, I soaked the chips in apple cider and used apple cider in the liquid wells
I have an Oak burning grill that has an adjustable cooking surface and would like to know if it will hold up.

We have an infra red grill. Can I use the smoking platform and get the same results?

Best Answer:I would think so...this works on the theory that cooking in a humid environment slows the evaporation of natural juices during cooking...it should definitely work. I always cook with this now and everything is juicier.

Is there any information anywhere regarding recipes for use with the smoking platform?

Best Answer:There are many different websites that have great recipes for smokers. I have attached a link to one here, but don't limit yourself to that one. I would search smokers, BBQ recipes and you will have more recipes than you know what to do with. Happy BBQ!http://www.beesource.com/forums/showthread.php?256622-Smoked-BBQ-With-Hone
