A must have pot!
This casserole has no faults. It is our second one because we seemed to gravitate to it but it was already in use. All-Clad is top notch!

Need induction cookware but there are differences between the new and old All-Clad
I've moved into a condo with a cooktop that has two induction hobs and two electric radiant burners - I will sure miss my old simple and instantly adjustable gas stove. Mainly because I won't be able to use my beloved All-Clad Master Chef cookware from the 90s on half the burners of my new cooktop. My Master Chef has been used everyday for years on my unfancy gas stove and it is still the best cookware I have ever used, perhaps because I know how it behaves.

So now on to induction cookware. One of my most used pans is my Master Chef 8" 2.5 qt sauté, so I needed a replacement. I found this 2 qt "casserole" version of the pan and it was on sale so I got it. There are some differences though. The most noticeable is the weight! The new tri-ply cookware is so much heavier, which I don't appreciate. And even though the new piece is heavier, the handles are small. The other difference on the electric burners is the old All-Clad seems to heat up faster. Maybe because of more aluminum? I don't know but the new cookware behaves a little different. I can't compare them on the induction burner though. The new casserole seems fine on the induction, but I prefer the less heft of my Master Chef and it's well known cooking characteristics on gas.

A major change is in the lids. The new lids are MUCH heavier and fit more snugly on the pan, but have a much a smaller handle so it is a lot harder to handle when hot. The heaviness of the new is nice but I much prefer the larger and higher handles on the old lids. So I put away the pretty new lid and just use my old ones.

The major improvement I'd like to see on this casserole is larger handles on the pot and on the lid.

Still it's a nice little pot and should work fine for me on the induction burners. I'll still have my Master Chef for the radiant burners though heck if I can figure out how to cook rice dishes on an electric burner when you can't just instantly turn down the heat! I guess it's induction for rice.

Change can be hard for some of us, even when we can afford the great luxury of really nice cookware!
