Our exclusive new Industry5 cookware collection is the culmination of a two-year collaboration between Demeyere and Sur La Table to produce the most innovative clad-metal cookware on the market. Designed to exceed the exacting standards of both professional and home cooks, Industry5 cookware boasts a five-ply 3mm-thick aluminum and aluminum-alloy core for fast and even heat distribution. The interior is nonreactive 18/10 stainless steel for easy cleanup, and the gleaming 18/10 stainless steel exterior is magnetic, which ensures exceptional performance on any heat source—including induction.

Each pan also features a pouring rim to prevent spills. The superior base stability of Industry5 cookware guarantees the bottom of the pan remains almost perfectly flat when heated, even to higher temperatures. Oils and other liquids will evenly coat the bottom of the pan and never pool on the sides for even cooking results time after time.

Each piece of cookware features Demeyere’s proprietary Silvinox finish—a unique system of electrochemical surface treatments that removes iron and impurities from the surface, the main causes of discoloration over time. The stainless steel exterior remains silvery white, even after many years of use. It also resists discoloration from fingerprints and heat, even when subjected to temperatures over 500°F.

The oversized stay-cool cast stainless steel handles are shot-blasted to ensure a secure grip, and make transporting a hot pan to and from the oven or stovetop easy even while wearing oven mitts. Each handle is welded directly to the pan, making it significantly more durable and hygienic than a traditional riveted handle. Food, grease and dirt will never accumulate inside the pan, so cleanup is a breeze.

Cooking Without Fat
I bought this 11"" Demeyere Industry5 skillet after much reading and research. I liked the clean look and its lack of rivets holding the handle to the pan. I took the time to watch the video about cooking without fat, by using the water test and waiting until the water dances in little balls after heating for several minutes. On an electric coil stove marked 0, 2, 4, 6 and ""High."" I started on number 6 and when the water danced into little balls, rather than hissing and evaporating, I turned the heat down to number 4. Next, I placed two very big slices of catfish in the skillet. Naturally, at first it stuck, but after about five minutes it self released, just like in the YouTube videos I'd seen.

After flipping and cooking the other side of the fish, I removed the fish and added a tablespoon of butter and a little white wine, using a wooden spoon to mix the butter, wine and fish bits that remained. It made a really tasty sauce.

I let the skillet cool and it cleaned up with no problems, looking shiny new after use. I highly recommend this skillet. It looks good hanging on the pot rack and works perfectly. I think it will last a long time as long as it's not overheated

Exceeds Expectations
I am currently converting from hard anodized aluminum to stainless. Well, you can't just call the Demeyere Industry 5 stainless. I bought this cookware for the engineering as much as anything else. The great balance, optimal shape, extraordinary conductivity, and superior handles was all lagniappe; they all come together to make an incredible frypan. I am gradually building a complete set of the pots I use most frequently. Also, I highly recommend you watch the videos, I did and they are great

"Great Pan, but you have to use it correctly."
I've used this skillet to pan fry chicken and pork, and searing steak. I had to watch some instructional videos as this is my first stainless steel skillet. I write ""use it correctly"" because this pan, like any stainless pan, is going to cause sticking and nightmare-ish cleanup if used improperly. 1) you can't add anything to the skillet until it's hot enough (google ""water droplet test""). If the pan's hot enough, it'll release any protein over time. 2) If you're using a stainless steel pan, you're going to want to deglaze the pan after cooking your protein (pour in wine, stock or juice into the used pan). This is one of the main reasons to cook with stainless. The benefit of deglazing is that it pretty much cleans the pan for you every time. Doing these two things will eliminate the two complaints most people have in their reviews.

As for these skillets, I think they're great. They are a tad on the heavy side, which might require some to use two hands when tossing. Love the no rivet design, which makes for easier clean up. The 5-ply design creates great even heating and heat retention for tossing and keeping the heat lower than you'd need otherwise

Best skillet I've ever used
I bought a 9.5"" skillet last night at SLT and have used it 3 times since.

I pan fried a steak, made bananas foster, and this morning made the most delicious omelet to ever come out of my kitchen.

It heats evenly on my cheap gas stove, and I found no need to bring the heat above medium to sear my steak last night.

This thing is a breeze to clean, this morning I used about 1.5tsp of EVOO to grease the pan for my omelet (started on medium, then moved to low heat), and with a quick shake it slid right out of the pan and onto my plate. After that, all it took to clean was a quick wipe with a sponge and it looks as good as new.

Highly recommended, I will be buying a whole set of this cookware. If you are having problems with food sticking or burning, you need to adjust your cooking style to fit these pans. They're superb

Great... on paper. Bad in practice.
It should have been telling that when I purchased the 8"" version of this pan in the store they had 2, but both were without their boxes. I was assured both pans were ""brand new,"" but after using one for a couple of weeks, I can see they were most likely returns.

So here are my two biggest gripes with it:

1. Poor balance between handle and pan. Demeyre used the same heavy handle across the whole line, so the smallest pan is very poorly balanced. Twice, I've barely knicked the handle while oil was heating in it, and it tipped down, and then fell right off the stove top splashing hot oil on my floor (but luckily not my legs). Scary. It needed a smaller handle, or food to be put in immediately.

2. Everything sticks to the sides. It must not be fully 'clad' up the side walls because although the bottom is a great cooking surface, browns, releases, etc... EVERYTHING, including my fats, burn onto the sides almost immediately. The heat is disproportionately spreading there and burning everything it comes into contact with, even as things simmer properly on the bottom (and yes, my flame is low, and yes, it's sitting on the proper, smaller burner). You might not notice this bizarre heat dissipation issue on a larger sized pan than the 8"".

So, I WANTED to love this little pan because I've been building out the set and think my other pieces are great, but FOR THE PRICE, I've been disappointed with it

Must read instructions for great success!
I have researched top rated cookware for about 3 years before choosing the Demeyer Industry 5. My husband gave this fry pan to me as a Christmas surprise!

I have learned, how to use this cookware, you must read the directions for best results! This is the nicest pan I have owned to date. I had over 25 different pan sizes in the original Calphalon cookware. I used it for 21 years and was so happy to sell it on ebay and start fresh.

After watching the videos, I have learned to use this pan. I've had wonderful results from cooking protein with no oil to making scrambled eggs with absolute perfection and no messy clean up.

I am looking forward to the purchase of the entire set very soon.

I highly recommend the Demeyer Industry 5 Cookware!
If you are or want to be an at home chef, and view cooking as an art as well as a science...this pan is for you.
If you just want to cook super, maybe try another brand.

lovely 9.5 skillet
I bought the 9.5 skillet on sale. It's my 2nd demeyere piece. The skillet works as well as expected. The clean up is a breeze and I followed the proper pre heating instructions to a t. I'm saving up for the 12.5 skillet because this piece and the 4qt saute pan are just excellent additions to my cooking arsenal. Can't rave about these enough!

This product didn't produce its advertised advantages. Food stuck, cleaning was impossible after washing, soaking over night & washing again. A SLT salesperson recommended Bar Keeper's Friend to complete the task. Additionally the cost of a lid, if desired, is exorbinate. Returning for another brand
