Our exclusive new Industry5 cookware collection is the culmination of a two-year collaboration between Demeyere and Sur La Table to produce the most innovative clad-metal cookware on the market. Designed to exceed the exacting standards of both professional and home cooks, Industry5 cookware boasts a five-ply 3mm-thick aluminum and aluminum-alloy core for fast and even heat distribution. The interior is nonreactive 18/10 stainless steel for easy cleanup, and the gleaming 18/10 stainless steel exterior is magnetic, which ensures exceptional performance on any heat source—including induction.

Each pan also features a pouring rim to prevent spills. The superior base stability of Industry5 cookware guarantees the bottom of the pan remains almost perfectly flat when heated, even to higher temperatures. Oils and other liquids will evenly coat the bottom of the pan and never pool on the sides for even cooking results time after time.

Each piece of cookware features Demeyere’s proprietary Silvinox finish—a unique system of electrochemical surface treatments that removes iron and impurities from the surface, the main causes of discoloration over time. The stainless steel exterior remains silvery white, even after many years of use. It also resists discoloration from fingerprints and heat, even when subjected to temperatures over 500°F.

The oversized stay-cool cast stainless steel handles are shot-blasted to ensure a secure grip, and make transporting a hot pan to and from the oven or stovetop easy even while wearing oven mitts. Each handle is welded directly to the pan, making it significantly more durable and hygienic than a traditional riveted handle. Food, grease and dirt will never accumulate inside the pan, so cleanup is a breeze.

Suitable for use on all cooktops, in the oven up to 600°F, and under the broiler. Dishwasher safe (hand wash recommended). Made in Belgium.

SUPERIOR BASE STABILITY
Each piece of Industry5 cookware has a perfectly flat base that stays perfectly flat when heated, even under high temperatures. SILVINOX FINISH
Demeyere’s proprietary Silvinox finish is a unique system of electrochemical surface treatments that removes iron and impurities, the main causes of discoloration over time, from the pan surfaces. WELDED STAY-COOL HANDLES
Large, shot-blasted 18/10 stainless steel handles are welded directly to each pan, not attached with screws or rivets. Cooking Without Fat
I bought this 11"" Demeyere Industry5 skillet after much reading and research. I liked the clean look and its lack of rivets holding the handle to the pan. I took the time to watch the video about cooking without fat, by using the water test and waiting until the water dances in little balls after heating for several minutes. On an electric coil stove marked 0, 2, 4, 6 and ""High."" I started on number 6 and when the water danced into little balls, rather than hissing and evaporating, I turned the heat down to number 4. Next, I placed two very big slices of catfish in the skillet. Naturally, at first it stuck, but after about five minutes it self released, just like in the YouTube videos I'd seen.

After flipping and cooking the other side of the fish, I removed the fish and added a tablespoon of butter and a little white wine, using a wooden spoon to mix the butter, wine and fish bits that remained. It made a really tasty sauce.

I let the skillet cool and it cleaned up with no problems, looking shiny new after use. I highly recommend this skillet. It looks good hanging on the pot rack and works perfectly. I think it will last a long time as long as it's not overheated

Exceeds Expectations
I am currently converting from hard anodized aluminum to stainless. Well, you can't just call the Demeyere Industry 5 stainless. I bought this cookware for the engineering as much as anything else. The great balance, optimal shape, extraordinary conductivity, and superior handles was all lagniappe; they all come together to make an incredible frypan. I am gradually building a complete set of the pots I use most frequently. Also, I highly recommend you watch the videos, I did and they are great

Best skillet I've ever used
I bought a 9.5"" skillet last night at SLT and have used it 3 times since.

I pan fried a steak, made bananas foster, and this morning made the most delicious omelet to ever come out of my kitchen.

It heats evenly on my cheap gas stove, and I found no need to bring the heat above medium to sear my steak last night.

This thing is a breeze to clean, this morning I used about 1.5tsp of EVOO to grease the pan for my omelet (started on medium, then moved to low heat), and with a quick shake it slid right out of the pan and onto my plate. After that, all it took to clean was a quick wipe with a sponge and it looks as good as new.

Highly recommended, I will be buying a whole set of this cookware. If you are having problems with food sticking or burning, you need to adjust your cooking style to fit these pans. They're superb

Must read instructions for great success!
I have researched top rated cookware for about 3 years before choosing the Demeyer Industry 5. My husband gave this fry pan to me as a Christmas surprise!

I have learned, how to use this cookware, you must read the directions for best results! This is the nicest pan I have owned to date. I had over 25 different pan sizes in the original Calphalon cookware. I used it for 21 years and was so happy to sell it on ebay and start fresh.

After watching the videos, I have learned to use this pan. I've had wonderful results from cooking protein with no oil to making scrambled eggs with absolute perfection and no messy clean up.

I am looking forward to the purchase of the entire set very soon.

I highly recommend the Demeyer Industry 5 Cookware!
If you are or want to be an at home chef, and view cooking as an art as well as a science...this pan is for you.
If you just want to cook super, maybe try another brand.

lovely 9.5 skillet
I bought the 9.5 skillet on sale. It's my 2nd demeyere piece. The skillet works as well as expected. The clean up is a breeze and I followed the proper pre heating instructions to a t. I'm saving up for the 12.5 skillet because this piece and the 4qt saute pan are just excellent additions to my cooking arsenal. Can't rave about these enough!

This product didn't produce its advertised advantages. Food stuck, cleaning was impossible after washing, soaking over night & washing again. A SLT salesperson recommended Bar Keeper's Friend to complete the task. Additionally the cost of a lid, if desired, is exorbinate. Returning for another brand

Best Answer: The 9 1/2 inch Demeyere Industry 5 Skillet is 2 1/4 inches tall. The 11 inch skillet is 2 3/8 inches tall.

The design of a skillet is such that it is supposed to encourage evaporation, a lid counter-acts that function so most skillets will not come with lids. There are not currently any lids offered in the Demeyere Industry 5 line that are made for the skillets, however the 3 qrt. Saute Pan does come with a lid that will fit the 11" skillet but will be too small for the 12.5"

Are these skillets fully clad?

Does the 5-ply layering continue up the sidewalls of skillets, or is it only on the bottom

Will these pans work with induction cooktops?

Best Answer: While I don't have an induction cook top, my Industry 5 Skillets all have the following imprinted on the bottom of the pan: Halogen, Induction, Gas, Electro and Vitroceram (which should mean Vitroceramic or glass cooktop). I believe this indicates that it operates with all these cooktop technologies and I wouldn't think you would have a problem. However, going to Demeyere's site, demeyere.be (select the english tab), and select Industry product set, under technologies it reviews two if the Industry 5's features, TripInduc and ControlInduc, specific features for induction cooking which look fairly impressive. I will say this much, Demeyere has not steered me wrong yet and I can't imagine anyone every having a complaint about their pans. (with the possible exception of the Atlantis....cooks incredibly, however I have to do the dishes because my wife has a hard time lifting the larger Atlantis pans. They are quite hefty. However, once again, they cook like no other!

Best Answer: I have a new induction stove top from Miele the burners are a standard 9 inches. Miele has larger burner for larger pans. of 11 inches

The Atlantis skillet is a 7 layer with copper/aluminum with just 2 sizes. Does that go up the sides or is this just on the bottom? The proline is 7 layers but it only has aluminum but it states it goes up the sides. And the Industry5 has only 5 layers. Is there a significant performance difference between the 3? Also, Williams-Sonoma has a Demeyere plus so is that the same as Industry5?

Best Answer: Unlike any other Demeyere line, the composition of Atlantis cookware varies by vessel. Straight sided pieces--like sauce pans & sauté pans--have an 18/10 stainless steel cooking surface, but that is the only layer that goes up the sides. The cooking surface has the same 18/10 stainless steel surface, but it also has two layers of silver with a layer of copper sandwiched between & three proprietary layers called "TriplInduc", which make it induction compatible. Conical shaped pieces--like sauciers--have seven layers that go all the way up the sides. The top layer is 18/10 stainless steel, followed by three layers of aluminum & three layers of TriplInduc. Because frying pans need to have optimal heat retention, they have the same seven layers as conical pans, reaching all the way up the sides, but the they have more aluminum in them.
Proline & Atlantis skillets are actually one in the same, so the product description on the Atlantis page will be changed, while the Proline description is correct.
Industry5 has an 18/10 stainless steel cooking surface, three layers of aluminum & an 18/0 bottom layer, but no TriplInduc. Therefore, Atlantis/Proline will heat up a little faster & retain heat a little longer than Industry5, but you wouldn't notice a major performance difference in the two unless you have an induction cooktop, as Atlantis/Proline is up to 40% more induction compatible.
Industry5 does seem very similar to the Demeyere 5-Plus that Williams Sonoma carries, but since I called Williams Sonoma & was told "any information that isn't already on the website is confidential & kept by the corporate office," I'm afraid I can't give a comprehensive comparison on the two.

Does the nonreactive 18/10 stainless steel interior surface provide any inherent non stick properties?

I have been using non stick skillets for so long, I am somewhat reluctant to invest the money if my food is going to stick to the pan
