Our exclusive new Industry5 cookware collection is the culmination of a two-year collaboration between Demeyere and Sur La Table to produce the most innovative clad-metal cookware on the market. Designed to exceed the exacting standards of both professional and home cooks, Industry5 cookware boasts a five-ply 3mm-thick aluminum and aluminum-alloy core for fast and even heat distribution. The interior is nonreactive 18/10 stainless steel for easy cleanup, and the gleaming 18/10 stainless steel exterior is magnetic, which ensures exceptional performance on any heat source—including induction.

Each pan also features a pouring rim to prevent spill. The superior base stability of Industry5 cookware guarantees the bottom of the pan remains almost perfectly flat when heated, even to higher temperatures. Oils and other liquids will evenly coat the bottom of the pan and never pool on the sides for even cooking results time after time.

Each piece of cookware features Demeyere’s proprietary Silvinox finish—a unique system of electrochemical surface treatments that removes iron and impurities from the surface, the main causes of discoloration over time. The stainless steel exterior remains silvery white, even after many years of use. It also resists discoloration from fingerprints and heat, even when subjected to temperatures over 500°F.

The oversized stay-cool cast stainless steel handles are shot-blasted to ensure a secure grip, and make transporting a hot pan to and from the oven or stovetop easy even while wearing oven mitts. Each handle is welded directly to the pan, making it significantly more durable and hygienic than a traditional riveted handle. Food, grease and dirt will never accumulate inside the pan, so cleanup is a breeze.

The roasting pan measures 17½" long (with handles) x 13¾" wide x 3" deep and can hold a 30-lb. turkey. Suitable for use on all cooktops, in the oven up to 600°F, and under the broiler. Dishwasher safe (hand wash recommended). Made in Belgium.

SUPERIOR BASE STABILITY
Each piece of Industry5 cookware has a perfectly flat base that stays perfectly flat when heated, even under high temperatures. This is a marked advantage over other cookware that tends to have a more pronounced base expansion as it heats, which causes liquids to pool around the edge. In our Industry5 pan, oil evenly coats the entire surface for great results time after time.

SILVINOX FINISH
Demeyere’s proprietary Silvinox finish is a unique system of electrochemical surface treatments that removes iron and impurities, the main causes of discoloration over time, from the pan surfaces. Thanks to the innovative Silvinox treatment, the stainless steel exterior remains silvery white even after many years of use. It also resists discoloration, even under temperatures over 500°F, and is more resistant to fingerprints.

WELDED STAY-COOL HANDLES
Large, shot-blasted 18/10 stainless steel handles are welded directly to each pan, not attached with screws or rivets. Industry5’s stay-cool, welded handles are more durable and more hygienic, preventing food and grease from accumulating. The shot-blasted stainless steel construction provides a firm, comfortable grip even while wearing oven mitts. The Silvinox finish also provides superior scratch-resistance over time.

A very good solid roasting pan
I consider this roasting pan an investment. It is made in Europe and worth it. I've only used it once but it performed superbly with a roast leg of lamb for Easter. Timing worked and it heated very evenly, or as even as my oven heats. It is a bit heavy at 11 lbs but nothing I can't manage, and I like knowing that it won't bend or flex. Cleanup of both the pan and rack was easy. Looking forward to using it again

Pan is great but rack is not
The rack is too small for the pan. It can slide around quite a bit, and in the process scratches the corners of the pan. Having a heavy piping hot item like a turkey slide around on you as you try to remove it from the oven is disconcerting. Having your super expensive super nice pan get scratched up is upsetting. Would be nice if the rack were sized to fit snugly. Should also have rounded feet and/or silicon feet to further reduce the chance of scratches. Doesn't seem like the rack was designed/built/chosen/tested by the same folks who made the pan itself.

Roasting Pan is very nice-very sturdy!
It is well made and has a good weight to it so you don't have to worry about it warping while cooking in it. I have cooked a ham and turkey in it so far and I am very pleased with the results. I thought it cooked the turkey more evenly than any of my old roasters ever did. Though it is an expensive purchase, I consider it an investment of sorts that will be handed down to family when my cooking days are over! I have purchased almost all of the Demeyere Industry 5 collection over the past few years and highly recommend this product line if you can find a way to fit it in the budget. You won't be disappointed at all!

The handles are welded on to the outside of the pan making the pan easier to clean. Whenever rivets are on the inside, it is nearly impossible to get the pan completely clean.

How would you describe the fit of the rack inside of the pan (i.e., is it a firm fit or is there a little wiggle room?)

Best Answer: There's a *lot* of wiggle room. Seems to be a design flaw: a heavy item (e.g., turkey) will slide around as you move the pan in or out of your oven, which is disconcerting, and in the process the four corners of the pan get scratched up. Otherwise still a great pan. Would be nice if the rack were sized to fit snugly and/or have rounded feet and/or silicon feet. Seems the rack was an afterthought.
