I purchased this roaster 1 week ago to use for the Thanksgiving turkey. I am very happy with it. I do just wish that it also came with a flat rack as well, or that a flat rack that fits inside the roaster were available for purchase. I was a bit skeptical at first about purchasing because it is advertised as being 1.5 mm thick instead of 2.6 mm, but it was just fine. I am afraid that if it were 2.6 mm thick, with the added weight plus a large turkey that I would have had trouble lifting it out of the oven. It made a beautiful pan gravy. It cleaned up beautifully and I know that I will get many years of service out of it and will hand it down to my daughter. Does anyone know where I might purchase a flat rack that fits on the inside of the roaster
This is a quality roaster and after roasting my two 16 lb. Thanksgiving turkeys, I have a few things to say. It does a nice job of roasting. The birds were beautiful and golden. The pan has a heavy weight and conducts heat very well. The handles are substantial.
Be prepared, if you're like me and want to keep the pan looking new, to spend some time cleaning the pan after you're done. Be sure to have some Barkeepers Friend at home. The spatters were on the inside and outside of the pan. After cooking, I filled the pan with water and let it soak overnight. Some substantial spatters left a stain, so I got the Barkeepers Friend out. Within a few moments, the stains were gone. I had to take a toothbrush and clean around the rivets for the handles. The exterior polishes very well. I did not put it in the dishwasher so I don't know if that's a better way to go.
I also noticed some scratches on the bottom of the pan after placing it in the oven on my rack, but I expect that. I have to believe my pan is getting a patina ;-).
This pan and I will be friends for a long time and I am so glad I made this purchase
I bought this after a lot of research to replace a 30+ year old cheap aluminum roasting pan. There are just too many dents on it that interfere with making the pan gravy from the turkey or roast. Had ordered an All-Clad and cancelled when I read that it is NOT clad and the bottom crowns. The pan drippings, with a crowned bottom, will run to the edges and make it nearly impossible to make a pan gravy or my favorite, Yorkshire pudding. My research led me to this pan as one that is GREAT for pan gravies. In fact, the description states ""making this the best roaster for creating pan sauces and gravies on the stove. "" Eureka, I'd found my roaster! A little more than I wanted to pay, even on-sale, but what the heck. Ordered it, received it (Oh how beautiful and solid), and cooked a turkey in it. The turkey was perfect. I poured off the drippings, added the fat back to the pan to make the roux on the stove top. OH NO, ALL THE DRIPPINGS RUN TO THE EDGES OF THE PAN. IT'S, IT'S CROWNED. THE BOTTOM IS CROWNED!!!!!! I called customer service and they were SUPER. Sadly, I've returned this and continue my journey to find a roaster that's as good as my old/ugly/dented/wobbly aluminum one. At this point, that journey seems even more difficult and elusive than finding the holy grail!!!! Whoa is me. A little over dramatic? No, a LOT over dramatic!!! After all, it's just a roasting pan. I bought this roaster for the Thanksgiving Turkey. It is heavy duty, works well on top of my ceramic stove top to simmer as well as baking the bird. I am coming from using a covered roaster so this was different. Covered with foil but obviously need to experiment more as the bird did not brown well but that is simply my need to use this pan more often. I wanted a roaster I could make gravy with as the last roaster actually had four areas where part of the pan came off. That will not happen with this pan as it is so well made and it will last me the rest of my roasting life time
It's emabarrassing the amount of research I put in to buying a roaster pan for Thanksgiving! I bounced from site to site--reading reviews, measuring my oven against the measurements of the pans, etc.
Then I wondered if this pan wouldn't be great because it wasn't as thick as the normal roaster they offer. Save yourself the time. I bought this pan, plopped my 18 pound Willie Bird into it and this pan cooked the turkey evenly and faster--thanks to conducting the heat--and so beautifully. My only thought is to be prepared as your meat may cook faster...ours sure did. No sweat...turned the oven down...popped the other dishes into the other oven...and dinner went off without a hitch
I adore this pan, and being a die hard All Clad user that's saying alot. I originally bought the All clad stainless roaster, but had a hard time justifying the high price tag. After all, how many times would this roaster be used? The gentleman in my new Sur La Table brought my attention to the stainless shiny interior in the All Clad that woud scratch when making gravy. The Mauvile had a brushed stainless interior, and would not do that. Also...price. I got a special few day sale of 119.99, and that beat the All Clad price of 169.99, and might not scratch. Added bonus Mauviel makes fine cookware that carries a lifteime warranty. Cleans up beautifully after roasting the Thanksgiving turkey, and making gravy where I had to scrape up the browned turkey bits. Simply, a beautiful roaster. Sorry All Clad, the french have the edge with this one. Can't say enough good things about this roaster. Buy the Mauviel, buy it from Sur La Table
I had the absolute best experience buying and using this roasting pan. It was originally on sale for $159 when I purchased it, but before it was even delivered, Sur La Table had dropped the price to $119. I wrote to customer service and they refunded me the difference immediately!
I used the roasting pan for Thanksgiving, the first Thanksgiving my fianc� and I have ever hosted together, and it worked like a champ. My turkey came out beautiful, perfectly juicy, and the pan is so gorgeous when pulled out of the oven, all shiny and hefty. It is quite heavy, but i like that. It feels sturdy, like it'll last forever

How much does this roaster (without the rack and packaging) weigh?
Some other web sites have warned of thinner inferior name brand roasting racks like All-Clad and Mauviel being offered just prior to the holidays at low sale prices, but are not the same quality, thickness and weight of their non-sale priced roasters. I want to be sure I am getting the real deal at the sale price before I plunk down $$. I also noticed a comment about the All Clad tri-ply roaster also being offered right now for $159.00 that it can't be used on an induction range because the bottom is slightly domed. So my question is ""Are the brands we trust offering inferior merchandise at a 'sale' price just before the holidays""

This roasting pan has received a five star review, and was called such things as ""substantial"" and ""sturdy"". This is a quality roasting pan at a great price that you can trust
My experience with this pan is that it is completely flat when it's cold and the bottom stays flat when heated. However the actual surface cooked on (the top of the bottom?) is crowned. As such it's difficult to make a pan gravy since everything runs to the edges. I returned it because of this.
How does this roasting pan compare to the large size Sur La Table brand roasting brand in terms of performance?

Best Answer:While the same materials are used for both of these roasting pans (18/10 stainless steel and Aluminum) The construction and thickness is a little different between the two.Mauviel has a total of 5 layers (Stainless Steel-Aluminium Alloy-Aluminum-Aluminum Alloy-Stainless Steel) and is approximately 1.5mm thick. The roaster itself is dishwasher safe (not the rack) and it is induction compatible.The Sur La Table Tri Ply Roasting Pan has three layers (Stainless Steel-Aluminum-Stainless Steel), is also approximately 1.5 mm thick and is not induction compatible due to the fact that the bottom of the pan is not completely flat
