I have been a big fan of these tartlet shells for years, and always have a couple of boxes in my pantry! They make really quick and easy desserts, and you can fill them with so many delicious options! I usually fill with lemon curd and blackberries, but recently tried coconut curd and pineapple. That was a huge hit and they all disappeared
I like to use these tarts for large parties as it is easy to grab and eat vs cutting up a cake or pie...the tarts are delicious and allow me to offer a variety of different fillings...I always get tons of compliments...
I will be filling them with a cheese cake filling and a mousse filling. Can they be filled the night before, or will they get soggy?

Best Answer:Have never tried this, and not sure I understand. Is the filling being cooked the next day or does the filling just need to be refrigerated to set up? If they need to be cooked, the tart is so crisp that I think they would become soggy with a liquid filling staying in them for so long before being cooked.
One time we used chocolate and vanilla pudding, that had already cooled. The leftovers were not as good as the ones we ate right away. Yes, surprisingly, there were a few leftovers.
These are a heavier, thicker shell than we have used in the past and I think they would be ok. If you're looking for a thin shell, this is not it, but still very crumbly and tasty. If you keep in the fridge you should be ok. We do crème cheese and choc moose over Christmas and have leftovers for a week and are still eating them so...
I filled them with chocolate mousse and lemon custard fillings early in the morning...then brought them to an evening party and none of the tarts were soggy...but I don't know how it would be if they were filled 24 hours in advance...hope this helps a bit...
