Amazing heat distribution
I never believed in cooking with copper until I got this skillet. I was browning chicken skin-side down and over-crowded the pan because I didn't have time to brown in batches. I had a feeling I may be in trouble with the ones sitting up along the edge of the pan. To my complete amazement, every single piece of chicken browned evenly and beautifully! I removed the chicken, deglazed the skillet, added back the chicken and the whole thing went right into the oven for 45 mins and dinner was done. The easiest, most delicious braised chicken complete in an hour. I've been touting this Mauviel skillet to every want-to-be-home-chef I know! If you've ever wondered about cooking with copper, buy one now and give it a try! You will not regret it

Best in Class
We bought our second 11.8"" skillet as a gift for our Mom. She was staying with us while her house was being built. She loves to cook and used this pan nearly daily. We have had ours for a year now and are slowly converting over to copper cookware because the cooking experience is so much better. The quality really is heirloom. These pieces will last longer than we do. They are beautiful looking as well and performance is second to none. They are priced high so we are adding pieces slowly, but the skillet is a good piece to start with as you can use it a lot and get a good feel for what it is like to cook with copper

what a lovely little pan!
I needed a new 8" and knew what I was looking for as far as cooking surface and construction. I have never used copper before and I am NOT disappointed at all with my choice. This little beauty was on sale so I decided to give it a go. Here is what I have found: It heats quickly, doesn't have "hot spots", and I have yet to ruin what I have been cooking in it. It cleans well, came with very clear instructions on how to best keep it looking nice.

The handle however quickly became an issue. Because it is hammered metal, it tends to heat up rather quickly requiring me to use a pot holder in order to handle the pan. While it is not a "problem" per se, I do like to use my bare hands when using my pot's handles for better grip and controllability. My only disappointment, or rather perhaps an unfortunate surprise. However, I will continue to use this little workhorse until it falls apart. So far I can totally recommend this 8"pan.

perfect introduction into using Mauviel cookware...a great wedding gift that fit my budget. The bride had remarked she couldn't imagine cooking an egg in a $100 skillet. Now she can experience it!

I was looking for a new 8" skillet and the reviews of this little pan are overwhelmingly positive. Have never tried copper cooking but am looking forward to the experience! I do appreciate that the bottom of the pan is smooth rather than with a cooking plate. They tend to heat more evenly without the plate.

Have used this pan I am ordering myself.
Am setting my daughters kitchen up and thought this was a must have basic. With a moderate amount of care it will last a lifetime.
